Aquadora Opens Saturday

Aquadora, a new restaurant and lounge featuring seafood and contemporary American cuisine, will open its doors on Saturday, October 29 at Village on the Green, adjacent to the Galleria in North Dallas.

The interior of the 6052 square-foot restaurant has a modern feel with a palette of cool colors and wood accents. The space features an open bar area offering fresh fruit infused champagne cocktails and specialty martini list, a main dining area with global-influenced tapas and raw bar, private dining room seating 30, enclosed patio with fireplace, and an upstairs lounge with bottle service.  

The menu for Aquadora has been created by veteran Executive Chef Mike Dimas, who brings over 19 years’ experience to the kitchen. Chef Dimas takes a different approach to the traditional surf and turf restaurant throughout his new menu.

The world tapas and raw bar menu not only features the anticipated seafood and shellfish components, including sashimi, ceviche and smoked fish and scallops, but also offers an array of cheeses, cured meats, olives, house pickled veggies, and small bite appetizers. The menu of 25 – 35 selections changes nearly daily and utilizes seasonal ingredients from local and national boutique producers.

Dinner, while having a heavy seafood influence, varies from the common steakhouse and fish market concept with dishes like Bock Braised Short Ribs and Seared Ahi on Caramelized Shallot Potatoes with Micro Greens and Citrus Vinaigrette. In addition to lighter seafood dishes such as Oven Roasted Sable Fish and Saffron Broth with Roasted Fingerling Potatoes, Zucchini, Yellow Squash, Carrots and Pea Shoots, Chef Dimas uses free-range organic chicken for the Harissa Roasted Chicken in Phyllo with Toasted Cous Cous, Sugar Snap Peas and Cucumber Minted Yogurt.

For dessert, enjoy house-made offerings with seasonal fruits, peanut butter and decadent chocolate. Continuing with the unexpected, Chef Dimas adds a petite caramel apple to the Warm Apple Turnover with Cinnamon Anglaise and Brown Sugar Glaze. Additional house favorites include Peanut Butter Banana Torte with Chocolate Ganache, Peanut Brittle and Raspberry Coulis, as well as Dark Chocolate Pot Du Crème with Black Pepper Cherry Compote, Chantilly Cream and an Almond Lace Cookie.

Aquadora’s wine list was meticulously crafted by General Manager Mike Lakomski with wine consultant Eric Moore. Featuring 20 whites, 20 reds and 10 sparkling, it is a collection of unique, “off the beaten path” selections from around the world – each carefully selected to be food-friendly with no heavy oak to overpower the dish. With all bottles under $100, the list is designed to introduce diners to great tasting, affordable wines that are outside the expectations of the typical wine list.

Table service also comes with a twist, with servers using the latest technology to entertain guests and expedite service. Each server will be equipped with an innovative point of sale (POS) iPad to show pictures of the dishes, have details about ingredients for any food allergies and to communicate directly with the kitchen. The goal is to reduce bottlenecks at server terminals by generating orders directly from the tableside to the kitchen and, most importantly, to allow servers additional time to engage with guests.

After dinner or as a late-night destination, patrons can enjoy Aquadora’s upstairs lounge complete with a state of the art sound system, music by some of the Dallas’ top DJ’s and bottle service in addition to its extensive cocktail menus. For those needing a late-night nibble, the tapas and raw bar menu is available nightly until 2am.
