Celebrate Groundhog Day With Authentic Ground Hog

by Steven Doyle

For those adventuresome food enthusiasts who may wish to celebrate Groundhog’s Day by doing a bit more than avoiding your shadow, we have a few ideas that you may wish to enjoy today in celebration and hopes of a quick Spring (as if it isn’t Spring enough for you this Winter).

Here is where we suggest you dine on authentic Ground Hog.

Kuby’s has been a Dallas institution since 1961 creating house-made sausages, offering cured meats, a large variety of salads and fresh meats in their delicatessen. Recently Karl Kuby told us that he has a smoker that is massive and valued in excess of $125,000. That dedication to the craft is evident in the product they make available at their Snider Plaza location in Dallas.

The Wurst Teller (sausage plate) with homemade sauerkraut, hot German potato salad and red cabbage is definitely a highlight on the menu and a fine example of true Ground Hog.

You may also wish to wash down your Ground Hog with a pint or two of beer. Look for Deep Ellum Brewery to be tapping a keg  of their new rye pilsner called Rye Pils at Strangeways later today. Watch for Punxsutawney Phil.
