Jeff Harris Guest Cheffing At Ava This Sunday

Jeff Harris, the Executive Chef at Bolsa and Bolsa Mercado, is preparing Sunday night dinner as guest chef with Randall Copeland at Restaurant Ava. Together the chefs will create an incredible evening with this unique seasonal menu that include pickled romanesco, beef belly pastrami and duck confit, among other selections.   

Restaurant Ava is just a short jaunt from downtown Dallas in Rockwall, Texas at 108 S. Goliad. The dinner is Sunday evening at 6pm and includes 5 courses for $49 with an optional wine pairing for $35. If you have been looking for an excuse to check out this unique restaurant, now is the time.

Tasting of Cauliflower with crispy floret with truffle aioli, soup with brown butter and black trumpets, pickled romanesco, purple cauliflower

Roasted Monkfish, Benton’s country ham, grilled octopus, eggplant purée, white beans, Barking Cat peppers, mustard greens, preserved lemon

Duck Confit Ravioli, sweet onion espuma, roasted beets, Brussels sprouts, crackling

Wagyu Bavette and Beef Belly Pastrami, toasted oats, red wine spiced yogurt, cabbage, assorted mushrooms, celery root, and mustard jus

Kabocha Squash Cake with huckleberries, buttermilk and pecan ice cream
