Sushi | Bar Hospitality to Open Omakase-Style Sushi | Bar and Cocktail Lounge Ginger’s in East Quarter Downtown Dallas on December 1

Sushi | Bar Hospitality announces today, the expansion of Sushi | Bar, the distinguished 17-course omakase experience as well as their new concept, Ginger’s, a classic cocktail lounge, set to open in Downtown Dallas’ East Quarter development on December 1 at 2115 Jackson St, Dallas, TX 75201.  Reservations are available to book now for the month of December.

The popular-omakase style, speakeasy concept opened to great fanfare in Austin in 2020, and was named one of Miami’s hottest new restaurants upon opening in the Esmé Miami Beach Hotel in 2022.

This new location of Sushi | Bar marks the second in Texas and fourth in all of the U.S. The space includes two subterranean intimate sushi omakase rooms, each seating a maximum of 12 guests, hidden speakeasy-style behind Ginger’s.

Dallas has been a focal point for bringing our concept to the market since day one and we are thrilled we finally found the perfect location to do so.”

Sushi | Bar Dallas will welcome an intimate 12 guests per seating, to journey through a 17-course omakase experience that is steadfast in showcasing the freshest fish sourced and flown in weekly via some of the best markets in the world including Japan, Australia and California. The nigiri offerings change with the season and availability, but feature signatures like an Aged Bluefin Akami with dehydrated red miso and everything bagel spice; Hokkaido Scallop with white truffle salt, shaved black truffle and truffle caviar; and A5 Wagyu with brown butter miso. Additional Dallas-exclusive pieces will be included in the experience and influenced by the region’s leading purveyors and artisan growers.

Stock explains, “We are bringing something to the city that Dallas does not currently have. We offer hospitality executed at the highest levels creating a special experience for our guests. Sushi | Bar often introduces diners who may not traditionally be fans of sushi and shows them a more comfortable and approachable format of omakase. It is an all nigiri omakase which is rare and to this day, the only one in the country that sticks to that format.”

Local design firm, JonesBaker, utilized the historic East Quarter building that was once a part of Dallas’ “Auto-Row” as the Oldsmobile building in the ‘20s to create an inviting, comfortable space for the omakase experience. Guests will enter into the dimly lit 100-year-old car lift platform where they will descend into the basement level by stair or lift. Old finishes were maintained such as the weathered cement plaster, worn wood, air vents and piping. The space is adorned with black and white marble checkered floors, wood-trimmed walls of cement and contrasting wall coverings along with nods to Japanese style throughout.

Sushi | Bar is designed to transport diners with a mysterious allure that fades into a friendly, intimate experience between chef and guest. Nightly diners will be offered a selection of available drink pairings including sake, cocktails, wine and beer. Guests are encouraged to arrive 20 minutes prior to their designated seating and enjoy a welcome cocktail to ease their way into Sushi | Bar’s playful take on nigiri and other delicacies.

Sushi | Bar Dallas’ reservations are available via Tock HERE for bookings Wednesday – Sunday with 7 days/week dining available early 2024. The nightly seating times are 5 pm, 7:15 pm, and 9:30 pm. The signature experience is $165++ per person with the option to add curated sake and wine pairings. Reservations are released on a monthly basis on the first day of each month.


Ginger’s, Sushi | Bar Hospitality’s new classic cocktail lounge concept is connected to Sushi | Bar but has a separate entrance for those wanting to strictly enjoy the sophisticated lounge bar or enjoy a drink prior to the omakase experience. Guests dining at Sushi | Bar will be escorted through the exit of Ginger’s where they can enjoy a post-omakase cocktail in the refined, glamorous 1,200-square-foot space.

Stock says of creating Ginger’s, “We found that guests enjoying Sushi | Bar are sitting in this immersive experience, enjoying cocktails and sake for over two hours. When the dining comes to an end most guests are looking for an option to continue the evening and keep things going. Ginger’s is our way for guests to continue their evening in a seamless transition over to a world-class bar and lounge.”

Ginger’s bar program was created by Sean Kenyon, a worldwide award-winning mixologist with awards such as “American Bartender of the Year” at the Tales of the Cocktail Spirited Awards in 2014; his bar Occidental has been honored as one of Esquire’s “Best Bars in America” in 2016 and Playboy’s “Top Ten Bars” in 2016.

Kenyon has created a program that focuses on premium spirits and all of the perfectly crafted classic cocktails. Stock explains, “Ladies and gentlemen that are looking to drink martinis, Manhattans and old fashioneds are going to get the best expression of those at Ginger’s.”

A rotation of small snacks will also be available for guests shortly after the Ginger’s opening.

Stylish bartenders will serve up everything from high pour martinis to negronis to margaritas with a splash of theatricality. Ginger’s will also feature live musicians and DJs to keep the space lively for those sipping and lounging.

Also designed by JonesBaker, guests will be greeted by an intimate lobby with gilt wallcoverings and an antique mirror. They will then descend a sweeping staircase with brass railing into a sophisticated lounge bar with exposed brick walls and velvet curtains leading into the moody space. The classic yet modern setting features art deco details, cozy U-shaped leather booths in rich tones of green, gold, and red, while a marble-topped walnut bar anchors the space with its mysteriously lit back bar highlighting the broad selection of high-quality liquor.

Ginger’s will be open Monday – Thursday from 5 – 11 pm and Friday – Sunday from 4 pm – 1 am.


Sushi | Bar was founded in 2019 and opened in Los Angeles and Montecito, California (2019). In 2020, Adept Hospitality, (a partnership between Ryan Stock, Josh Tohl, and Jonathan Husby), with a collective 55+ years in the hospitality and development business, joined forces with partner Steve Michaels of Asylum Entertainment Group, to expand the Sushi | Bar concept into Austin. In December 2021, a decision between Michaels and Adept Hospitality – Sushi | Bar Hospitality’s partners – was made to amicably part with the group’s then chef, a minority shareholder.
