Having honed his skills in top-notch sushi kitchens from Brooklyn to Boulder, Bordayo brings a fresh perspective that seamlessly blends tradition with bold, non-traditional ingredients—many inspired by his Mexican heritage. “I love sushi for a million reasons,” he says, “but mostly for that instant joy of handing a guest a stunning piece of nigiri and watching their eyes light up. At Sushi | Bar Dallas, diners embark on an intimate 17-course omakase adventure, limited to just 12 guests per seating. The ever-evolving menu features the freshest fish sourced weekly from top markets in Japan, Australia, and California. Bordayo’s culinary philosophy embraces innovation, allowing him to explore the abstract and push the boundaries of sushi.
