
Trades Delicatessen has quickly become a steady presence in the Bishop Arts District since opening in February 2024. It’s the place where people return to without much thought—for a morning bagel, a relaxed lunch, or a familiar order that never disappoints. The deli manages to feel approachable and well put together at the same time, fitting neatly into the everyday rhythm of the neighborhood.
The deli comes from Jason Roberts and Amy Wallace Cowan, the team behind Oddfellows and Jaquval Brewing Company, and the connection is literal. Trades shares a kitchen and an open wall with the brewery, which gives the whole space a communal feel. You can see food moving back and forth, people drifting between coffee and beer, and conversations carrying across the room. It feels less like two businesses and more like one long, shared idea.

Bagels are the heart of the operation, and they’re done with care but no fuss. They’re baked in-house every day and come in the classics—plain, everything, blueberry, onion, and poppy seed. At $2.50 each, they’re meant to be eaten often. Add a schmear for a few dollars more, whether that’s veggie cream cheese or something sweeter like cinnamon, and you’ve got a breakfast that feels both familiar and satisfying.
Lunch brings a lineup of sandwiches that stick to what works, just done better. The Italian is layered with mortadella, soppressata, pepperoni, and provolone, with enough crunch and acidity to keep it from feeling heavy. The turkey melt leans into comfort, with Swiss cheese, grilled onions, and honey mustard coming together in a way that feels straightforward and right.
