The Ritz-Carlton Las Colinas Hosts Fraîche Wine Dinner

The Ritz-Carlton Dallas, Las Colinas, is raising the bar for wine lovers with the launch of the Knife Sommelier Series: Fraîche Edition at Knife Italian Steak, where guests will enjoy a five-course culinary experience from five Ritz-Carlton chefs paired with exceptional wines curated by acclaimed guest sommelier Michael Kennedy, founder of Fraîche Wine Group, which features a robust portfolio of small, family-owned wineries from California, Oregon, Washington, Italy and France.

The experience kicks off on Friday, March 20, with a curated menu of robust wines and elevated cuisine designed to showcase each pairing. Guests can embark on a culinary journey beginning with Chef Gilles’ refined Beef Tartare accented by smoked oyster, Hokkaido Bafun Uni and Paramount Kaluga Hybrid Caviar, paired with a crisp SOM Sauvignon Blanc from Oregon’s Willamette Valley. The experience continues with Ritz-Carlton Amelia Island Chef Okan Kizilbayir’s Yellowfin Tuna dressed in dashi vinaigrette with red onion and avocado alongside a SOM Chardonnay, followed by an Octopus Terrine with olive and chorizo vierge, pepper and sundried tomatoes, paired with SOM Pinot Noir. 

The evening’s heartier offerings include Chef Kiko’s classic Fish and Chips featuring halibut with gribiche sauce, followed by Chef Alex’s show-stopping 90-day dry-aged Striploin served with confit duck, pickled shallot, miso and black garlic puree, paired with two standout Napa Valley Cabernet Sauvignons from Caldwell and Trailside Vineyards. To bring the evening to an indulgent close, dessert offerings from Chef Stephanie include Yuzu Sorbet and Manjari brown butter ice cream topped with miso passion fruit caramel. 

The Knife Italian Sommelier Series: Fraiche edition runs from 6:30 to 8:30 p.m. Tickets are $165 per person and reservations can be made through OpenTable.
