John Tesar Lands at Palladino’s

John Tesar didn’t stay unattached for long.

Two weeks after his Knife Italian Steak closed at The Ritz-Carlton Dallas, Las Colinas, the Dallas chef has a new job. The Palladino Group has named Tesar its corporate executive chef, putting him over both Palladino’s Steak & Seafood restaurants, the original in New York’s Grand Central Terminal and the new Dallas location at 5959 Royal Lane in Preston Royal.

It’s a reunion as much as a hire. Restaurateur Joseph Palladino, whose résumé includes Nick & Sam’s, has known Tesar for about 20 years, and the two had talked about working together before the timing finally lined up. Tesar will split his time between Dallas and New York.

Diners will see his hand on the menu right away. Palladino’s is building out its seafood and Italian dishes, starting with a tableside Dover sole finished with brown butter and capers, and adding flat iron, skirt and baseball steaks to the beef program. For a chef whose dry-aged steaks made his name in Dallas, that’s familiar ground.

Palladino’s opened in Preston Royal this summer, and with Tesar now in the kitchen, it just became one of the more interesting steakhouse stories in town. We wrote about Knife Italian’s closing earlier this month, and you can read about Palladino’s Dallas opening from June.

Palladino’s Steak & Seafood is at 5959 Royal Lane.
