John Tesar and Alex Stratta at Knife


EAT (RED) DRINK (RED) SAVE LIVES Week at Knife at The Highland Dallas continued last night with a one-of-a-kind dinner by Michelin and James Beard awarded Chef Alex Stratta and Knife Dallas’ Chef John Tesar. This was the second of five consecutive collaboration dinners for (RED) Dallas Ambassador Tesar, following the first night kickoff dinner with Franklin BBQ’s Aaron Franklin.

“This cause is close to my heart, and I’m really honored to be able to raise funds and awareness this way,” Tesar told donors on the second sold out night. “I’ve known Chef Alex since 1992, and I consider him to be one of the best chefs cooking in America today.” 


For the menu, Stratta offered torchon of foie gras on raisin toast with sautéed green apple followed by a porcini risotto and spiced beef cheek with dried fruits and chickpea-almond puree. Tesar began with spoons of king crab and fried chicken skins with chipotle aioli, followed by a salad of pea shoots and freeze-dried peas with Benton’s ham and English pea sorbet; and an Arctic char with pickled Asian mushrooms, lotus root and a mushroom dashi.

Knife Pastry Chef David Collier finished the evening with a fanciful dessert of crème brulee tubes.

During the evening, Chef Stratta discovered that several guests had previously dined with him in his Las Vegas restaurants, including his newest concept Tapas by Alex Stratta.


“It’s really incredible to go to another city and experience a new culinary scene, and at the same time, discover so many connections,” said Stratta. “This has been a fantastic experience, and I’m flattered by the reception.”

Beverages included a special Crimson cocktail created by Knife barman James Slater, featuring strawberry-infused Belvedere (RED) vodka, vanilla bean syrup and lemon, followed by AIX Rose wines selected by Knife sommelier Sabrina Snodderley and beers from local Four Corners Brewery.

The dinner series continued tonight with another sold out event featuring guest chef Naomi Pomeroy (Beast, Portland), Tim Rattray (The Granary, San Antonio) on June 4 and Kris Morningstar (Terrine, Los Angeles) on June 5.
