Travis Street Gains Butcher Shop

Georgie by Curtis Stone, the Knox District restaurant, announced today that it will open its Butcher Shop early March. The long awaited addition has intrigued guests since the November 2019 restaurant opening. The cuts of meat hanging from the window has made Dallas diners wonder when it would open for business.

“The G Butcher Shop is committed to provide the highest quality meats that have been brought to market in a manner that is in line with our principals,” said Stephan Courseau. “Our in-house butcher, Mike Lawson, is known for his passion and mastery of butchery, and is part of a movement known as ‘ethical’ butchering.”

Mike Lawson has a tenured background in the restaurant industry. He served as the Executive Sous Chef for both Gemma and Sachet and was in charge of the cured program at Oak Cliff’s Macellaio. Outside of Dallas, Lawson also worked for Mario Batali in Las Vegas.

The G Butcher Shop will also double as a made-to-order Gourmet Sandwich shop at lunch, with counter and patio seating. The quaint French-inspired shop will also serve breakfast with homemade pastries from its sister restaurant, Up On Knox, and fresh, organic squeezed juices. Alongside cuts of meats, prepared foods including rotisserie chicken, charcuterie, terrines as well as a local selection from Brazos Valley Cheese and Brush Creek Creamery will be available.

“We’re passionate about meat,” said in-house butcher, Mike Lawson. “We are proud to offer products that have an emphasis on high ethical standards with unique flavors.”

The G Butcher Shop will be open Monday through Friday at 8:00am for breakfast, from 11:00am to 3:00pm for sandwich service, and for retail until 6:00pm. On Saturday and Sunday, The G Butcher Shop will be open from 11:00am to 6:00pm.
