FireBird Fowl Takes Flight in Uptown

David Taylor and Tim Summers are happy as a lark to bring their latest concept to Uptown. Located at 2816 Fairmount Street, Firebird Fowl is now open with a menu devoted to giving classic dishes a unique Texas Twist. Prepare for a culinary adventure with a menu that features lean and healthier proteins like Chicken and Turkey as well as ranch-to-table Duck, Emu, Ostrich and Texas Quail. Overseeing the kitchen will be Executive Chef Ben Smallman, who most recently led the culinary team at Eataly Dallas and was the man in charge of the menus at both I Trulli and Il Ristoro del Cinghiale in New York City.

Menu highlights include Emu Fajitas made from an Emu steak filet, sauteed Shishito Peppers, bell peppers, jalapeno peppers and green onions, and served with a side of duck fat bacon black beans, fresh pico, sour cream, cheese, and tortillas; Orange Pepper Duck Tacos made with ground duck, cabbage and broccoli salad, and orange & onion glaze, then drizzled with a light sour cream, lemon and parsley sauce and served on a duck fat fried corn tortilla with a side of bacon black beans; The FireBird sandwich is a nod to the signature Nashville Hot Chicken sandwich made with Betty’s homemade coleslaw, housemade pickles, a spicy comeback sauce, and served on a brioche bun; and a Cornish Game Hen Tikka Masala served with Basmati Rice and Naan Bread.

Taylor and Summers had originally planned to launch a Nashville hot chicken concept, but after seeing multiple hot chicken concepts open in the Dallas-area in the past year, they pressed pause. “Tim and I have talked about opening a restaurant together for years. Our conversations always revolved around menus that were heavy with chicken and turkey recipes because we wanted to provide healthier and leaner options.” said Taylor. “It occurred to us that absolutely no one in Dallas was offering alternative proteins like emu, ostrich, and duck. So, we switched gears and are proud as peacocks to bring something totally new to the market.”

Taylor is also the creator of DizziBrands, a Dallas food concept specializing in alcohol-infused desserts such as ice cream, frozen pops, sorbets, and gourmet gelatin shots. The entire collection, as well as a few new recipes of boozy creations, make up the Firebird’s dessert menu so you’ll need to be over 21 years of age to partake since all dishes are made with up to 17% ABV ice creams with house made infused spirits. In addition, 8 flavors of boozy frozen pops are served alongside other choices such as infused Cinnamon Whiskey Apple Pie, Key Lime Margarita Key Lime Pie, and a Rum Soaked Cheesecake will give you something to crow about!

Classic American cocktails can be found at the oversized downstairs bar as well as a large selection of house made infused vodkas, tequilas, and bourbons. In keeping with the theme, all of the wines served are bird themed wineries such as Duckhorn, Decoy and Blue Ostrich Vineyards, among others.

The second floor is named The Nest because it’s the perfect space for guests to get a bird’s eye view of the entire restaurant. With Audio/Visual, DJ Booth, and exquisite dining spaces The Nest is where birds of a feather can flock together and get close or get away from the main dining room for a cozier experience. Patios are a must for guests, so they designed 3 of them! When you dine in The Coop, you’ll be sitting in the catbird seat. This is the largest climate enhanced patio on the property that can be rented out for private events or shared as a high energy vibe with your friends for brunches or evening cocktails.
