Founded in 2021 by Bobby Pollette, a seasoned chef with roots in Kailua Kona, Hawaii, and Jeff Acol, the bistro embodies a fusion of New American cuisine enriched with global influences. The name “Au Troisième,” translating to “the third place” in French, reflects the founders’ vision of creating a space that serves as a comfortable retreat between home and work.

In March 2023, the establishment underwent a rebranding to A·T Bistro, aiming for enhanced accessibility and brand recognition. This change coincided with several upgrades, including the addition of a 600-square-foot dog-friendly outdoor dining area, a 14-seat private dining room, and a 600-bottle wine cellar open to guests. These enhancements complement the bistro’s commitment to providing a welcoming and sophisticated dining experience.
A·T Bistro’s lunch menu is a testament to its innovative approach to New American cuisine. Signature dishes include the “New Style Cuban,” featuring Hawaiian-style kalua pig, house-made ham, Swiss cheese, and mojo au jus, and the “Kimchi Reuben,” which combines corned beef, kimchi kraut, Swiss cheese, and Korean thousand island on marble rye bread. The daily $16 “Blue Plate” specials offer a rotating selection of comfort foods with a gourmet twist.
As evening descends, A·T Bistro’s dinner menu transforms into a celebration of refined global flavors. Diners can indulge in dishes like the “Fish Provencal,” a French-inspired preparation, and the “Texas Gumbo,” which features andouille sausage, Gulf shrimp, and okra, complemented by a house-fermented hot sauce that adds depth without overwhelming heat. The bistro also hosts “Fried Chicken, Burgundy & Caviar Night” on the first Tuesday of each month, offering a lavish spread for $125 that serves four and includes a whole crispy fried chicken, mac and cheese, collard greens, black-eyed peas, biscuits and jam, and cobbler, with Burgundy wine and caviar available for an additional cost.
