The PoBoy Shop Opens in Preston Center

Opening Monday, July 7 in Preston Center, The PoBoy Shop is bringing bold po’boys, house-prepared meats, and flavorful Cajun sides to the fast-casual scene. This new eatery comes from the team behind Evan’s Meat Market and is built around the same attention to detail and Southern flavors that made their first concept a local favorite.

Owner Evan Meagher, originally from Lafayette, Louisiana, created The PoBoy Shop after his po’boy lunch specials at Evan’s Meat Market gained a loyal following. Now, he’s turning that demand into a full restaurant dedicated to the food he grew up with—done his way.

Every sandwich starts with French bread brought in from Langlinais Bakery in Lafayette, where Meagher once worked. The po’boys are loaded with meats made in-house, fresh toppings, and bold sauces. Options range from fried shrimp and hot pastrami to cauliflower with bang bang sauce and fried bologna with cheddar and mustard.

The menu also features cold-cut po’boys, hearty salads with po’boy toppings, and sides like Cajun curly fries, potato salad, and “dirty fries” topped with boudin and jalapeños. They’ve even added the classic muffuletta, packed with ham, bologna, salami, and olive salad on a soft 9-inch round loaf.

Inside, you’ll find a cozy space with butcher block counters, Louisiana-themed wallpaper, and an open kitchen. There’s limited seating, both inside and on the patio, with takeout and delivery options available soon.

Soft opening hours run from 10:30 a.m. to 3:00 p.m. daily, July 7–13. Regular hours begin July 14: 10:30 a.m. to 8:30 p.m. daily. You’ll find The PoBoy Shop at 8421 Westchester Drive in Preston Center.
