
Night Rooster, the modern Chinese fine dining restaurant from Hooper Hospitality Concepts, opens Friday, January 31 in the Dallas Design District. Led by acclaimed chef Shirley Chung (Top Chef finalist and Food Network personality), the restaurant presents a personal, Texas-influenced expression of Chinese cuisine rooted in heritage, resilience, and hospitality. Night Rooster is located at 1000 N. Riverfront Blvd., Dallas, TX 75207, on the ground floor beneath Hooper Hospitality’s Italian steakhouse, The Saint.

Named for a Chinese folktale symbolizing perseverance and renewal, Night Rooster marks both a new chapter for Chinese fine dining in Dallas and the realization of a decades-long collaboration between Chung and Hooper, who first worked together more than 20 years ago.
Chef Chung—often called “The Dumpling Queen of Los Angeles”—has worked with culinary icons including Thomas Keller, Guy Savoy, and José Andrés, and is the chef behind Twenty Eight Modern Chinese and Ms Chi Cafe. Her return to the kitchen follows a profound personal journey: in 2024, Chung was diagnosed with stage IV squamous cell carcinoma of the tongue and is now in full remission. Night Rooster represents her renewed purpose and continued advocacy with the American Cancer Society as a Champion of Hope.


The menu blends traditional Chinese technique with Texas ingredients. Signature dishes include Tea-Smoked Duck brined for 24 hours and smoked with jasmine tea and hickory; Wagyu Cheeseburger Potstickers with bacon tomato jam; Lobster and Shrimp Air Eggrolls; Drunken Yellowtail with tequila soy; and duck fat spicy chicken wontons. Larger-format dishes include Sweet and Sour Branzino, Orange Texas Quail, Honey Walnut Prawns, and steak and broccoli with prime filet and black pepper sauce, alongside rice and noodle dishes such as Lobster Noodles, Cacio e Sichuan Pepe, and Tea-Smoked Duck Fried Rice. Desserts range from a Hot Mochi Donut with tofu coffee chocolate mousse to Matcha Layer Cake, complemented by a curated loose-leaf tea service.
The cocktail program mirrors the kitchen’s intent, using Texas-grown ingredients and modern interpretations of Chinese flavors, with standouts like East Meets West and Dove Dynasty.
Designed by Greg O’Neal of Philosophy Design, the dining room balances drama and warmth while maintaining a distinct identity from The Saint above.
