Opened in 2017 by Regino Rojas, the lounge began with a modest 49-seat space and has since evolved into a multifaceted culinary destination with a newly expanded storefront on 2646 Elm Street, complete with outdoor seating and a thriving to-go operation.


What sets Revolver apart isn’t just the food—it’s the philosophy. Every tortilla is house-made, using heirloom Mexican corn that’s nixtamalized in-house. That commitment to authenticity radiates through every bite. Rojas, whose culinary roots trace back to Michoacán, brings deep respect for Mexican heritage to every taco, while adding daring flavors and elevated techniques that continue to turn heads. His achievements haven’t gone unnoticed; he was named a James Beard Award semifinalist for Best Chef: Texas for his work at Purépecha, the intimate chef’s tasting experience.
The al pastor taco remains a fan favorite. Rich, marinated pork is carved fresh off the trompo and nestled into a fluffy, warm tortilla, topped with pineapple and salsa for that iconic sweet-heat balance. But it’s the octopus carnitas taco—at $12—that has become a cult classic. A daring surf-meets-turf composition, this taco combines tender octopus slow-braised in lard with smoky depth and sublime texture, proving that tacos can be just as refined as any plated entrée.
