Evan’s Meat Market, the Dallas butcher shop known for its premium meats, Louisiana-style po’boys, and Cajun sides, will serve its final customers Monday, August 18. Though the shop is closing, its spirit continues at The PoBoy Shop in Preston Center.
Founded in January 2023 by Lafayette native Evan Meagher, the market was his first hospitality venture—a blend of butchery, Louisiana flavors, and personal connection. It quickly became a neighborhood favorite for its house-cured products, warm service, and authentic Cajun dishes.
“This was an incredibly hard decision,” said Meagher. “The butcher shop let me share my Louisiana roots with Dallas. I’ll always be grateful to the loyal patrons, media, and every conversation at the counter that shaped this journey.”
Like many independents, Evan’s faced rising costs, staffing challenges, and shrinking margins. Despite strong community support, sustaining the retail butcher model long term wasn’t feasible. Meagher praised landlord Stockdale for its support, calling Preston Center “the perfect home from day one.”
While the market closes, its recipes, team, and vision live on just a few miles away. The PoBoy Shop carries forward Evan’s signature house-cured meats, authentic po’boys, and Cajun sides—served in a fast-casual format built for growth. Fresh bread still arrives daily from Lafayette’s Langlinais Bakery, where Meagher once worked, bringing an authentic Louisiana touch to every sandwich.
“The truth is, The PoBoy Shop wouldn’t exist without Evan’s,” said Meagher. “That butcher counter laid the foundation for something bigger. This isn’t the end—it’s the next step. I’m lucky to keep doing what I love, with the same team, just in a new way.”
