
Dallas has a new reason to look up. High above the city on the 11th floor of the JW Marriott Dallas Arts District, the newly opened JW Steakhouse is reshaping the classic steakhouse experience with a Texas spirit, a global pantry, and a view that rivals the food.
“Dallas knows steak,” says Executive Chef Miguel Antonio, “but we wanted to push the conversation forward.” The menu certainly does that—yes, there are the traditional big cuts seared at 1,200 degrees in a Montague broiler, but they arrive brushed with garden herbs, finished with artisanal salts, and garnished with clippings from the hotel’s rooftop garden. The result: plates that balance power and precision, indulgence and restraint.
The Stars of the Grill


Signature offerings include a 32-ounce porterhouse, a 16-ounce ribeye, and a bone-in short rib kissed with the kitchen’s proprietary spice blend. Each is engineered for crust, smoke, and tenderness, then elevated with herb bouquets cut just steps from the dining room.
But JW Steakhouse isn’t just about tradition. Dishes nod to Dallas’ diverse culinary landscape and the team’s personal heritage:
- Duck with cherry mole, Spanish-style farro, summer squash stew, and panela cheese—built on a recipe from the senior sous chef’s family table.
- Miso-marinated sea bass with soba noodle salad, crispy tempura, and hand-cut shiso.
- A barbecue-inspired mushroom “meatloaf” that trades brisket for meaty fungi, plated with campfire bean purée, pickled okra, and dehydrated carrot powder.
Even the cornbread gets a glow-up, paired with local honey butter and pickled jalapeño jam.

The kitchen is as thoughtful behind the scenes as it is on the plate. Beef trimmings become house-rendered tallow, carrot peels are dried into seasoning powder, and in 2024 alone, composting efforts diverted more than 7,000 pounds from the landfill. Partnerships with Texas Fungus, Blackhawk Farm, and Regiis Ova keep the supply chain as local and traceable as possible.
The dining room seats 137 and keeps its brass-and-marble bones intact, while a striking glass-rack installation above the bar frames sweeping skyline views. It’s polished, it’s welcoming, and it’s perfectly placed for pre-theater dining thanks to the restaurant’s three-course Overture Menu.
