Monarch Introduces Autumn Chef’s Tasting Menu

Monarch has unveiled its new Autumn Chef’s Tasting Menu, curated by Two-Michelin-Star Chef Danny Grant and Executive Chef Jason Rohan. This multi-course experience is designed to highlight the season’s flavors through refined technique, thoughtful wine pairings, and a touch of culinary surprise.

The tasting begins with a whimsical “Ants on a Log” welcome bite before moving into a progression of seasonal dishes such as Salt Spring Mussel with Osetra Caviar, Pumpkin Arancini with dill and pepita, and Duck Confit with orange caramel and warm spices. Courses continue with Dover Sole with charred cabbage, Doppio Ravioli with roasted sunchoke and truffle purée, Heritage Squab with foie gras and sweet potato, and a decadent Rosewood Wagyu Filet with Madeira jus. A Lemon Granita palate cleanser leads to dessert: Fico—poached figs with fig leaf ganache and gelato. Each course is paired with selections from Italy and France, thoughtfully chosen to complement the menu’s balance of richness and freshness.
