Dish of the Week: Miso Glazed Sea Bass at Ramble Room

Ramble Room has a knack for making comfort feel polished. The dining room hums with energy, cocktails clink at the bar, and the menu moves easily between indulgent classics and coastal-leaning plates that show real restraint. It’s a place that understands its audience: refined but relaxed, stylish without trying too hard.

The miso glazed sea bass is the quiet star of the table at Ramble Room.

The fish arrives in a generous, snowy-white fillet, its surface bronzed and gently caramelized from the glaze. The first cut reveals flesh so tender it separates in wide, silky flakes. Sea bass is naturally buttery, and here that richness is sharpened and shaped by the miso. The glaze—savory, faintly sweet, deeply umami—forms a thin lacquer that seeps into the top layer of the fish without drowning it. There’s a subtle salinity, a whisper of sweetness, and just enough depth to keep each bite interesting.

The glaze is assertive but disciplined. It doesn’t bully the fish; it frames it as a bright element—often citrus or a lightly dressed vegetable—cuts through the richness and resets the palate. Seasonal accompaniments are treated properly, cooked to retain structure and color, adding texture against the bass’s softness.

It’s an entrée that rewards a slow pace. Pair it with a crisp white wine and let the flavors unfold gradually—the sweetness of the miso, the clean finish of the fish, the gentle char from the pan.

It’s simply a very good dish—thoughtfully prepared, deeply satisfying, and absolutely worth ordering the next time you’re at Ramble Room. In truth, it’s reason enough to visit on its own, though it sits comfortably among a menu full of plates that are just as deserving of your attention and curiosity.
