Scardello Cheese Tour Visits Waco

This past weekend was full of excitement, and the Scardello Cheese Tour that visited several Waco cheese makers was certainly a highlight. The tour included a large busload of Scardello customers along with staff members and owner and Rich Rogers and staff cheese monger and Crave contributor Lance Lynn.

The group met at Northpark Mall and embarked on a journey to Waco at 9am sharp arriving at the general store next to the Brazos Valley Cheese factory at Homestead Farms where we met up with head cheese maker Marc Kuehl who would be our guide for most of the morning.  Continue reading

Scardello Cheese Tour Saturday

Iron Fork Wrap Up

When we think of FIG, we usually think more of a fruit and less on the Fashion Institute Gallery, and on this last Wednesday, it seemed a bit more fitting as the Dallas Observer, in conjunction with Whole Foods, Fuze, Avion tequila and many other local establishments, created an event centered around food and wine. The highlight of the evening was an “Iron Chef” style cook-off between Charlie Palmer at the Joule’s executive chef Scott Romano and Suze Restaurant’s Gilbert Garza. We purchased a VIP pass and got in early, a key element to being able to taste and drink everything. Continue reading

A Visit with Caprino Royale

If you’re reading this, chances are you’ve probably stumbled across Caprino Royale cheeses on a cheese plate at Bolsa or served as a side at Salum as well as many other top Dallas restaurants,  although you might not know Eric and Karen by name. Known mainly for their fresh chevres and totally awesome decadent Cajeta, they recently released their first foray into the world of bloomy rind cheeses with their Texas Bloombonnet.
