Bennigan’s Making Comeback

Conundrum Project: Harbinson

“Do you want to participate in the Conundrum Project?” I usually say no to “a difficult problem or question.” As a small retailer, we have loads of Conundrums of our own. But this is a cheese problem and I couldn’t say no.

Jasper Hill Farms, a great Vermont cheesemaker, built the Cellars at Jasper Hill several years ago. The 22,000 square foot Cellars is the premiere aging facility in the United States. While many US cheesemakers practice the art of affinage, or cheese aging, themselves, much of Europe’s cheese production is split into 3 tiers – Milk production/animal husbandry, cheesemaking, and affinage (aging). The difficult task of cheesemaking is part science and part art. Aging cheeses also requires another skill set. Jasper Hill built the Cellars as a way to not only age their own cheeses, but to help a host of Vermont Dairy folk to take their unsustainable milk dairy and to help them become sustainable cheesemakers. By dropping their young cheeses off at the Cellars at Jasper Hill to be aged and distributed, these new cheesemakers can focus on just the cheesemaking aspect. Continue reading

Why Shop at a Market?

Is Dallas a good food town? A debate that has been waged across dinner tables and blog comment sections. No matter which side of the fence you fall on, ask yourself this question: how was the debate framed?

Most likely, you discussed restaurants. Is our BBQ as good as the Hill Country? Is our Italian up to snuff? Is our sushi really as good as NYC and LA?

All valid questions. But restaurants alone do not a food culture make! Markets are an integral part of any food culture. And guess what – Dallas has fantastic independent markets in every part of the city.  Continue reading

A Visit with Spain’s Isma Prados

Exciting does not describe the pure thrill of anticipation as we scan the series of events taking place at Central Market over the next few weeks. As we look through the multi-page flyer provided at nearly every check out counter at any of the market’s locations state-wide we get the feeling that Central Market has more than done their homework for the annual event that celebrates a different country each year. What a fantastic primer in geography, culture and cuisine and basically all things Spain.

For a greater appreciation of the event we implored the management of Central Market to allow us face time with some of the imported chefs. There are more than a few Spanish Michelin starred chefs milling about the Dallas Fort Worth area this week preparing for the Espana debut, and we were able to catch up with one of the more charming ones, Chef Isma Prados.    Continue reading

Texas Bloombonnet

Last month I introduced you to Eric and Karen from Caprino Royale down in Waco, one of the most promising young farmstead operations in the state. Last weekend, we got to visit their farm as part of our annual cheese tour (see Steven’s article for a complete roundup of the day). One of the highlights of the trip for me was getting to see where they make Caprino’s fantastic new addition to their lineup: the Texas Bloombonnet. A beautiful bloomy rind goat button, Bloombonnet is easily enjoyable all on its own, but the cheese is all the more impressive when you know some background about the difficult and inspired path that led to its creation.  Continue reading
