It’s official, we have a new food truck in Dallas called Rockstar Bakeshop. If you frequent the new trucks rolling around the city you may already be familiar with their fare since Denver and Kristin Leonard have been baking their whoopee pies since September 2011 when they rented a commercial kitchen and began marketing their treats to area trucks as an add-on sale.
“When we started everyone was doing cupcakes. It’s hard to stand out in a sea of the same. We started doing the whoopee pies and are now known for them,” said Kristin Leonard at the grand opening evening held this past weekend.
In addition to selling wholesale to food trucks you could find the couple at several Dallas area farmer’s markets including the Deep Ellum Outdoor Market and the Four Seasons Campbell Market. You will still see the baking dup at the Deep Ellum market, but now in the fully equipped truck.
“Originally we wanted a regular brick and mortar bakery, but then we saw this trend taking place in Dallas and thought it was a better option for us. Instead of waiting for people to come to us at a store, we can come to them wherever they are,” continued Kristin.
Rockstar’s biggest seller is their red velvet whoopee pie called Sweet Emotion which is made of red velvet cake, cream cheese frosting and a little bit of chocolate ganache. The next big seller is happily called Voodoo Child which is chocolate cake vanilla butter cream with butterscotch ganache and rolled in brown sugar.
A new feature for the bakers are their S’Mores Bar which is a cinnamon swirl cereal, chocolate chips and marshmallow which is toasted for a creamy and gooey S’Mores affect. They also have pretzel sticks that are dipped in chocolate and caramel.
