Bailey’s Soter Wine Dinner

Yesterday we discussed the goings on at Bailey’s Prime Plus. This is definitely one of my favorite restaurants in Dallas, and I predict with the new changes  it will improve to a level that it may be difficult to score a seat in prime time. Besides the physical beauty and interesting menu, one of the best features can be found in its sommelier, Jennifer Jaco.

Jaco is one of the new generation sommeliers that will speak in simple terms (or geek-speak if you so desire)  about the wines you drink while dining with her. It has been her personal mission since joining the Bailey’s staff to improve the list and bring interesting by-the-glass choices at easy price points. She also scours the city’s reserves to find that might have been thought unavailable and snags them for our pleasure. I sat with Jaco in the past and witnessed her blind-tasting ability, and the woman is uncanny.   

Just days ago we checked out the latest wine dinner for several reasons.  First, we heard  over a month ago that the Chesterfield chef, Michael Ehlert would be doing the menu for the evening. That is always an intriguing prospect.  Second, Soter Vineyards would be offering their pairings.

Soter Vineyards is a sustainable producer of premium Oregon Pinot Noir and sparkling wines. Tony Soter is one of the most respected winemakers in the business. His consulting clients have included such elite California labels as Araujo Estate, Niebaum-Coppola, Dalla Valle, Moraga Vineyards, Spottswoode, and Viader Vineyard. He now owns his own vineyard in Oregon where he is challenged with making great Pinots.

Pinot Noir is not all that Soter is making from his 22-acre vineyard. They also do a respectable sparkling wine which we were served this evening. Check out some of these pairings:
