Vivo 53 Opened Today at The Tower in Downtown Fort Worth

Vivo 53, a new restaurant serving its proprietary artisanal pizzas and handmade pastas opened today at The Tower in Downtown Fort Worth. The restaurant draws its name from the 53 attempts and three master bakers it took at exacting the perfect Italian dough with the ideal blend of crispness and incredible flavor.

“Vivo 53 begins with our artisanal, handcrafted pizza” said Vivo 53 owner Paul Daneshrad. “We are committed to high quality, Italian ingredients that create savory dishes that are bold, unique and rich.” 

Vivo 53’s authentic crust starts with a made from scratch dough which creates the base for gorgeous toppings including rich cheeses, house cured meats and fresh vegetables. Vivo 53 artisan pizzas include options:

  • Crispy proscuitto, fromaggio di capra, caramelized onions, fresh organic thyme
  • Fennel sausage, salami, mortadella, guanciale, fresh mozzarella, chili-fennel soffrito
  • Fried kale, mozzarella, fantal, red chilies, grana padano and tomato sauce

Along with wood-fired pizzas, Vivo 53 features handmade pastas made with durum pasta, cooked al dente and awash in robust house made sauces and artisan cheeses. Signature pasta is served in a decorative Italian pot with fresh shaved mozzarella di bufala, savory san marzano tomato sauce and fresh herbs. Additional Vivo 53’s decadent, handmade pastas include selections such as fettucine truffle Bolognese with white truffle oil, andsSpaghetti, Calabrian peppers, poached clams & mussels and botarga pangrattato

The unique design and structure of the restaurant allows guests to watch their food come to life in Vivo 53’s theatre kitchen. Positioned in the center of the restaurant, the wood-fired pizza oven serves as the heart of the space and is a constant hub of activity. The restaurant’s décor combines rich textures with clean, modern touches such as white subway tile accents and a sleek handcrafted metal pizza bar.
