Edward Grieb, chef-owner of the Fatted Calf in Rockwall and formerly of Zanata, will be throwing down barbecue in Rockwall with a new restaurant he has dubbed Hindquarter BBQ. We do not have many details since the chef is being a bit coy with details for the moment, but whatever Grieb does is always top-notch and has confirmed the information. He has a habit of only using fresh and local and has a line of great beef and pork in the area.
Look for the new restaurant in January. This could be the answer to the North Texas BBQ quagmire.
