Rockwall’s Rib Rub and Run This Weekend

I believe the reason we discuss Rockwall so much on craveDFW is because there are some pretty damned good chefs doing their thing there. The boys from Ava know their meat, as does Edward Grieb from the Fatted Calf, and Chad Bowden who is the head toque at Culpepper’s. This weekend you get to see all these chefs throw down alongside many others at the 4th Annual Rib Rub and Run. We are so big on the running part, but they had us at ribs.

This is a sanctioned BBQ event, which means the winners go to compete nationally. Competitors will be smoking their best pork spare ribs, baby backs and country style ribs as well.  Continue reading

Two Special Dinners This Week You Should Not Miss

There are two very special dinners this week that will be sure to cool you off from the blazing heat we are suffering through this summer and we wish to share these with you.

Just weeks ago we were first on the scene to announce the latest chef to hit the underground scene. Chef Ryan Barnett has a few seats left tomorrow (Thursday, July 26) where he will treat guests to a 4-course dinner at My Private Chef in Deep Ellum.      Continue reading

Rockwall Makes Damned Good Burgers

I was at a dinner party earlier this week and the subject of burgers hit the table. This was when I noticed the couple sitting across from me grab their cell phones to take notes.

I mentioned that I conducted a burger tour in Dallas and hit some pretty awesome spots. They wanted details.  I told them Rockwall seemed to be the home of some tremendous burgers. My little tour started in Rockwall at Boots Burger, the odd burger Mecca that is run out of a home in a residential neighborhood since 1968.  I stated that while you order from a walk up window, the neighbors are going about their business in a nonchalant manner; mowing their laws and trimming hedges, while young children dance about in a sprinkler. It’s an awesome burger for less than three bucks.      Continue reading

Rockwall’s Ava Adds A Ten Course Chef’s Tasting

We recently had a chance to check out the new ten course tasting menu at Restaurant Ava, the Rockwall wunderkind restaurant run by Nathan Tate and Randall Copeland. As the two prepare for their next venture in the Bishop Arts District, which will be called Boulevardier, they added a new chef in the Rockwall kitchen, Taylor Kearney. You may recall Kearney from his previous post as sous at Charlie Palmer under Scott Romano. Kearney is now chef de cuisine.

The new tasting menu opens up the chef’s bar where a small handful of guests enjoy special off-menu items while deep up in the middle of the kitchen action. The night we were at Ava Kearney was cheffing, Tate was in the expo position and Copeland ran the front of the house. It was interesting to have a first hand look at this smooth combination as orders were processed in a fast steady pace.    Continue reading

Culpepper’s Wente Wine Dinner

What do you get when you crowd a dozen chefs and a winemaker into a kitchen? Something fairly spectacular. Such was the case last week as Culpepper’s Steakhouse in Rockwall hosted Wente Vineyards at their semi-regular wine dinner where we were an invited guest.

The chef list was impressive and included the Good 2 Go taco gals, Colleen O’Hare and jeana Johnson; Ian Nicken’s from Chamberlain’s Steak and Chop; Pete Harrison from Dakota’s; Chad Bowden from Culpepper’s; Nathan Tate and Randall Copeland from Ava; Dan Landsberg from ZaZa and Culpepper’s pastry chef Rachel Jeske.       Continue reading

Hindquarter BBQ Opening in Rockwall

Edward Grieb, chef-owner of the Fatted Calf in Rockwall and formerly of Zanata, will be throwing down barbecue in Rockwall with a new restaurant he has dubbed Hindquarter BBQ. We do not have many details since the chef is being a bit coy with details for the moment, but whatever Grieb does is always top-notch and has confirmed the information. He has a habit of only using fresh and local and has a line of great beef and pork in the area.

Look for the new restaurant in January. This could be the answer to the North Texas BBQ quagmire.
