Sunday Brunch: Nosh Euro Bistro Plano

Chef Jon Stevens  joins us this week for Sunday Brunch where he shares his love for seasonality, his passion for cooking and some amazing brunch options. Specially designed and built by Bruce Russo, the newly opened Nosh Euro Bistro in Plano offers an intimate experience for diners through their large open kitchen and impressive communal seating.               

Originally from San Francisco, Chef Stevens has worked at an impressive list of highly-acclaimed restaurants including Mecca, Jardinere and the Ritz Carlton. He later moved to Dallas where he joined Chris Ward at the Mercury Grill and later to Abacus and eventually help open Jaspers in Plano. In 2010 he joined Avner Samuel in creating NOSH and plans on expanding to a 3rd location in Austin in the near future.

Chef Stevens finds inspiration through seasonality and approachability — “I like to get out as much as I can to see what other chefs are doing and after 20 years of cooking you really know it like the back of your hand. You realize what works and what doesn’t. Here at Nosh we offer chef-driven food and seasonality with a very approachable price. It allows us to show our passion for cooking and choose dishes that fully utilize our skill set.”

Top selections include the Maple Glazed Pork Belly Sandwich — served with an asian slaw on a toasted baguette and a side of perfectly crisp French fries and the yellow cheddar grits with house-cured beet salmon, creme fraiche, caviar, topped with a pan fried egg.

When asked what Chef Stevens hopes to teach future generation chefs he enthusiastically replied “I’m willing to teach young chefs everything I know as long as they’re passionate about it and want to learn. They have to put cooking first in their life like I did and want to absorb and grow as much as they can.”

Chef Stevens enjoys spending time with his son on his spare time and loves to snow board and play tennis whenever he manages a free moment to himself. His love for cooking, ingredients and imagination clearly grace the beautiful plates he creates at Nosh. Be sure to visit Chef Stevens for your next brunch!
