Meridian Announces Exciting Chef’s Tasting and New Menu Selections

Dallas’ highly acclaimed and beloved modern Brazilian restaurant Meridian invites Dallasites to explore their newest a la carte menu, which includes exciting updates as well as a chef’s tasting option, available at any seat in the restaurant. The chef’s tasting is an updated extension of the fixed-price menu Meridian debuted earlier this year to allow guests to embark on a culinary journey and experience a wide range of Brazilian flavors.

The updated chef’s tasting offering will continue to surprise and delight guests with carefully designed courses perfected by Chefs Junior Borges and Justin Mosely and inspired by seasonal ingredients from the on-site Chef’s Garden. The new a la carte menu will feature specialties such as the Whole Grilled Octopus featuring tamari caramel, Thai chile and spring onion vinaigrette, and the Rosewood Wagyu NY Strip served with malagueta chimichurri and bordelaise as two key highlights of the menu.

The Chef’s tasting option for diners seeking an adventurous experience can opt for the ‘Let Us Cook for You’ menu item that serves as the updated Chef’s tasting menu selection and is offered at $105 per guest, along with wine pairings available at an additional $58 per guest

“We’re thrilled to welcome guests in to experience some fun and interactive surprises throughout our new menu format,” shares 2023 James Beard Semifinalist for Outstanding Chef, Junior Borges. “The hospitality landscape in Dallas is ever-changing. When offering our pre-fixed menu experience earlier this year, our team learned that Dallasites embraced the opportunity to embark on an experiential culinary journey. We were able to learn more about what our guests enjoyed the most from our menu. At Meridian, we’re ever-evolving to meet our customer’s needs and offer the absolute freshest and finest ingredients and menu items, so we are thrilled to share this updated chef’s tasting as well as our new menu items”.

Guests can pair dishes such as the famed Grilled “Beach Cheese” on a Stick along with a craft cocktail, including the Meridian Martini or an authentic Caipirinha, while enjoying some spectacular new menu creations including the chef’s tasting menu.

The atmosphere at Meridian is unlike any other, the breezy feel of a pavilion and arresting exhibition kitchen with a wood-fired hearth serves at its heart. The dining room offers views of the adjacent 35-seat patio under a canopy of majestic live oak trees. Many of the restaurant’s ingredients are grown in the Chef’s Garden, a stone’s throw away.
