Dallas W Hotel’s Chef Vijay Sadhu On What He Plans For His New Menu

We recently announced that chef Vijay Sadhu was appointed chef at the curious restaurant in the W Hotel, Cook Hall. Curious because like many businesses in the Victory area it seems to have a bit of an identity crisis, but we feel that the addition of Sadhu will bring a welcome change of sophistication and international flair to Cook Hall.

The job of the chef at the W not only includes Cook Hall, but also room service for breakfast, lunch and dinner, service the Living Room Bar, as well as furnish meals for the residents. This is a big job that runs around the clock. Continue reading

Franconia Beer Paired Dinner Tonight At Cook Hall

Last week we mentioned that Vijay Sadhu was named the new executive chef at Cook Hall. Tonight you may check out his flavors at a special beer dinner when Cook Hall and Franconia Brewery four courses of pairings at his “Franconia Brewery Beer Dinner,” a prix fixe menu which begins at 7 p.m.

The dinner includes Singapore Stir-fry Chicken on Plantain Leaf paired with Franconia Amber, Ajo Blanco (Almond Gazpacho) – Grapes, Cucumbers, Toasted Almonds, Sourdough Croutons and Parsley Oil paired with Franconia Wheat, and a Smoked Rib-Eye – Maibock Beer Sauce and Smoked Collard Greens paitred with Franconia Maibock.  Continue reading

Vijay Sadhu Appointed Chef At Cook Hall

Chef Vijay Sadhu has been named the new Chef of Cook Hall bringing to the table more than 20 years of experience cooking in some of the most esteemed restaurants around the world.  Chef Vijay Sadhu will implement updates and improvements to an already excellent menu.

Chef Vijay Sadhu began his culinary career in 1993 in Hyderabad, India at the ITC Grand Kakatiya Hotel & Tower where he learned the Royal Cuisine of India under Master Chefs Vikram Sihma and Irfan Qureshi. From there he moved to Sydney, Australia where he continued to hone his skills at the Sydney Tower and earn his Culinary & Business Management degree from the National Business College Sydney, Australia.  Continue reading

New Chef At The W’s Cook Hall Blazes A Trail Marked Delicious

Cook Hall had always alluded me with dining that didn’t quite hit the mark. Recently, however, the W Hotel restaurant announced the arrival of a new chef in Douglas Wagenhauser, a happy wanderbub who had landed in a handful of Dallas restaurants including The Landmark and St Ann’s. I had a chance to meet the new chef this week and sample some of his cuisine that will officially roll out this weekend. The new menu is inspired by Fall and is loaded with plenty of local ingredients and blessed by the hands of the new chef. After a very warm Summer season bereft of many of my favorite vegetables, this new menu is inspiring and makes way to a bounty of interesting dishes.     Continue reading

Cook Hall and Four Corners Brewing Co

Cook Hall, the gastropub at the W Hotel in Dallas, held their second beer dinner last week. Four Corners Brewing Company was the showcased brewery and I was fortunate to be an invited media guest.

You could almost hand-deliver Four Corners beers to Cook hall. The brewery is at Trinity Groves on the west end of Santiago Calatrava’s glorious bridge over the Trinity River.         Continue reading

Report: Cook Hall and Real Ale Beer Dinner

It was only their first beer dinner but Cook Hall, at the W Dallas, virtually sold out the event this week. The gastro pub replaces Craft with a lower price option for hotel patrons and Victory Park visitors. The beer dinner offered a four course meal (plus a starter of raw oyster) with each course accompanied by a Real Ale Brewing Company brew. This craft brewery based out of Blanco, TX makes a range of beers inspired by Belgium, Britain, Germany and traditional American styles.   Continue reading
