
Dallas is about to welcome a fresh face in upscale neighborhood dining: ELLA, an intimate American bistro opening Tuesday, June 17, at 7949 Walnut Hill Ln #130. Located in the space formerly occupied by Chido Taco Lounge, ELLA is the brainchild of local restaurateur Blaine McGowan, whose vision marries thoughtful hospitality, elevated comfort food, and world-class cocktails—all wrapped in a refined yet relaxed setting.
Designed as a warm, modern space with 63 seats across 2,500 square feet—plus an additional 600-square-foot mezzanine—ELLA offers an inviting experience whether you’re a neighborhood regular or a destination diner. Upstairs, the Customs Speakeasy lives on, pouring bold, thoughtful cocktails with a focus on premium Mexican spirits, led by mixologist Jairo Castillo.
At the helm of the ELLA experience is Julian Shaffer, General Manager and Beverage Director, and the recipient of the 2024 MICHELIN Guide Texas Exceptional Cocktails Award—the first-ever given in the state. His beverage program is anything but predictable. Expect cocktails like the “Chocolate Raspberries” with brandy and cocoa butter, a “Poached Pear” infused with Riesling and miso brown butter, and a daring “Salsa Verde Ranch Water” featuring tomatillo and citrus.

The kitchen is commanded by Executive Chef Kyle Farr, whose pedigree includes celebrated Dallas kitchens Sachet and Boulevardier. Farr brings a chef-driven sensibility to comforting, familiar dishes—delivering sophistication without pretense. Highlights include the delicate Shrimp and Masa Dumplings with charred broccolini and tomato, tender Pork Cheeks in orange jus with roasted root vegetables, and a beautifully executed Short Rib paired with smoked sweet potato. Even the classic Bolognese gets a lift, with house-made pappardelle and a slow-simmered, flavor-packed sauce.
Inside, ELLA feels both feminine and timeless. Guests enter through a soft-lit patio into a space accented with deep green walls, blush-hued tiles, globe chandeliers, and plush booths. A hidden staircase, veiled behind drapery, adds a touch of mystery and leads to the upstairs speakeasy, Customs.
ELLA opens for dinner Tuesday through Saturday, 4–10 p.m., with lunch and weekend brunch service rolling out soon. Customs is open from 5 p.m. to midnight, serving sophisticated cocktails in an intimate, elevated lounge.
