I first met chef Andre Natera just days after he started working at the Fairmont Hotel Dallas almost two years ago. I could tell immediately that he had a much different agenda than any chef I had met before. His philosophy in helping the local restaurant community is like no other. The Fairmont Dallas will host a chef competition on December 9th, as Executive Chef André Natera and Executive Sous Chef Paul Peddle test their culinary talents in the hotel’s legendary Venetian Room. To spice up the challenge, a special mystery ingredient will be unveiled at the start of the competition, which the chefs will incorporate into their respective dishes.
A panel of judges will evaluate each chef’s dish on the basis of overall taste, presentation, originality and use of the secret ingredient. As the two award-winning chefs compete in this knock out live-cooking challenge, guests in attendance will enjoy a four-course dinner with accompanying wine pairings by expert sommelier Hunter Hammett. This weekend we were invited to check out the new Art Immersion Learning Experience at the Dallas Fairmont Hotel. The hotel has put together an art package that includes one night of their luxury accommodations, a one hour session with Ross Akard Gallery owner Bryan Embry, a walking tour of the Dallas Arts District, an hour session with the current Artist-in-Residence, and a specially prepared art dinner created by the Pyramid’s chef, Andre Natera. The Fairmont Dallas announced its fourth Artist in Residence for 2011, Ginger Geyer. Geyer, an Austin-based sculptor working with porcelain and mosaic, will contribute a special piece to The Fairmont Dallas’ permanent collection at the conclusion of her residency.
