Cooking with Nicole

We checked in with chef Nicole to find out what she has planned for the coming weekends at her underground dinners and she did not disappoint.

For this weekend expect more locally grown produce in the way of carnival squash, Japanese sweet potatoes, pears, chard, purple hull peas, onions and reed avocados. The 7-course tasting menu will also highlight a cheeseboard from Ali Morgan of Scardello fame, and local grass-fed beef.    Continue reading

More Underground Chef Info

There are still some seats available for Saturday night’s underground dinner with chef Nicole. She sends word that this Saturday will be particularly special with a guest Ali Morgan from Scardello, who will be showcasing cheeses.

Remember, Nicole is a classically trained chef who has cut her chops at such places as Nana and Bolsa here in Dallas.

Replay: DAT Underground Dinner

As part of our incredible week we had an opportunity to dine with chef David Anthony Temple (DAT) at his latest underground dinner. Last evening DAT featured freshly flown in seafood from Hawaii and it was so beautiful we decided to break out into song.
