A Spoon Foreshadowing Dinner

by Steven Doyle

Chef John Tesar has had a busy summer vacation. While off on a project that is being treated like Harry Potter’s nemesis, something that which cannot be spoken, he has also sprinkled in a few wonderful underground dinners.

The term underground dinner has been bandied about so much that it has lost its charm, but whatever you wish to call these intimate dinners Tesar’s was a grand slam and reminiscent of Tesar from around the way.  Working solo in the kitchen with a short staff of a somm who worked along-side another server, Tesar showed the sold out crowd that he was not out of practice since leaving his One Arts Plaza burger and wine bistro, The Commissary.         Continue reading

Ryan Barnett’s Underground Euphorium Goes French

by Steven Doyle

Taking my own recommendation, I joined a band of merry diners at the newest of the underground chef dinners offered at the not-so-secret location in Deep Ellum on the corner of Malcolm X and Elm. There a small group of food enthusiasts gathered with their own bottles of wines served by the staff of chef Ryan Barnett.

You may recall from previous articles here on craveDFW that Barnett is a talented and trained chef that is originally from the Dallas area (Hillcrest High for those keeping score at home) who has worked at some excellent venues in this city including Neighborhood Services as sous chef.                   Continue reading

by Steven Doyle

We have written about the Van Camps more than a few times. You probably read our little write up on Anthony Van camp this morning. He is the new big shot over at the Hilton Anatole Dallas. You may recall a few articles on his wife Nicole here  and here.

Nicole is the uber talented and super sweet chef who does those crazy underground dinners. These young chefs have accomplished so much in so little time. Nicole is turning a ripe 28 this week and she is throwing a party.  You are invited.       Continue reading

Tesar Goes Underground

by Steven Doyle

Chef John Tesar is getting back in the saddle as he makes preparations to open his latest restaurant concept, Spoons. You can now get your Tesar fix by attending one of his underground dinners that will be held at an unspecified location in Dallas, April 7, 2012. The dinner can be reserved on Eventbright and 40 seats have been made available.

The underground dinner will feature selections from “land and sea” but no specific menu has been revealed. The cost of the BYOB dinner is $99 per person.

Speaking with Tesar recently the chef made mention that he has another location in mind for his Spoons concept, but is holding back on official announcements until a formal lease has been signed.
