Listen To craveRADIO This Sunday For Beef And Chocolate

This week on craveRADIO we will host chef David Holben from Del Frisco’s in Dallas. Holben was trained as a saucier in France and has worked 3 Michelin Star restaurants in Europe before coming to Dallas to open The Riviera, but also worked kitchens at Mediterraneo and Toscana. Holben will talk beef, wine and his life as a chef-dad in Dallas.

Also on the program we will catch a glimpse of the Dallas Chocolate Conference and Festival held this October 26 at the Addison Conference Center.  We will speak to founder Sander Wolf who will bring along a few chocolaty surprises. We heard he may even bring along a chocolatier.

Del Frisco Italian Wine Dinner

Last week we attended the latest wine dinner hosted by sommelier Jennifer Jaco at Del Frisco Double Eagle Steakhouse. This was one of her more imaginative dinners and executive chef David Holben was totally on his game with the menu. Holben’s background, besides training at Michelin 3-star restaurants in France, includes The Riviera, for almost a decade one of the city’s premier restaurants. He also ran the kitchen at Mediterraneo and Toscana, a few of the more compelling Italian restaurants in Dallas history.

This was an interesting evening witnessing Holben’s departure from his typical Del Frisco menu.

While Jaco worked the room ensuring the comfort of her guests, we were guided through Italy vicariously through the fascinating stories and anecdotes of Italian wine expert Dan Rosenberg. By the end of the spirited evening most of the guests were chomping to book a flight to Italy. It is always a joy to see stand back and watch Jaco in action with her over-the-top wine knowledge and eagerness to share. We Power Coupled At Del Frisco

Last evening we tried out the summer Del Frisco Double Eagle Steak House deal, the Power Couple that offers a full meal for two at $99, not including drinks or gratuity.  We were met at the door by the familiar face of the sommelier Jennifer Jaco who had invited us in, and we were elated when she offered to give us a tour of the wine cellar after our dinner.

As you can imagine, the dinner was very good. What’s not to like about Chef David Holben’s steaks? The beef offered is a prime filet that is smattered with peppercorns and seared immaculately, as expected. But the star for us was the crab cake that is also included in the Power Couple deal. The crab cake was made of crab, some seasonings, and very little else. It didn’t take long to tackle the large cake.         Continue reading
