by Steven Doyle

I have an affinity for soft shell crabs and I just learned that the boys  at Sea Breeze in Plano has them in stock today and selling them raw for $8.99 each, or you can enjoy them in house as a platter for $19.99 served with two sides.         Continue reading →

Pasta la Vista Opens In Southlake, Baby. Free Tonight

by Steven Doyle

It’s kind of fast foodie, and it’s not.  Think of Pasta la Vista as a chicky Italian Which Wich. I say this only because you fill out a card that gives you combinations, which for some is really cool.  Well, cool if you have never worked in a restaurant.  But for those that have it may seem like you are doing all of the work.  Why not let us in the kitchen and make our own sauce, too?     Continue reading →

Bailey’s Soter Wine Dinner

by Steven Doyle

Yesterday we discussed the goings on at Bailey’s Prime Plus. This is definitely one of my favorite restaurants in Dallas, and I predict with the new changes  it will improve to a level that it may be difficult to score a seat in prime time. Besides the physical beauty and interesting menu, one of the best features can be found in its sommelier, Jennifer Jaco.

Jaco is one of the new generation sommeliers that will speak in simple terms (or geek-speak if you so desire)  about the wines you drink while dining with her. It has been her personal mission since joining the Bailey’s staff to improve the list and bring interesting by-the-glass choices at easy price points. She also scours the city’s reserves to find that might have been thought unavailable and snags them for our pleasure. I sat with Jaco in the past and witnessed her blind-tasting ability, and the woman is uncanny.    Continue reading →

NOLA’s Tennessee Williams Literary Festival

By James Casarez

craveDFW contributor Dorothy Hernandez, writer James Casarez, and Dallas Diva Farah Fleurima attended the Tennessee Williams New Orleans Literary Festival as part of their travels to the Big Easy. Here’s one of their dispatches:

An author as prolific as Tennessee Williams, who penned over 33 full-length plays and over 75 one-act and shorter plays, is bound to have an arsenal of hidden gems through his lesser-known works. The Tennessee Williams Literary Festival class “Hiding in Plain Sight” brought together a collection of scenes through staged readings of both his lesser-known works and more recognizable ones. Luminaries of the stage and page came together to breath life again into some of Williams’ most outstanding characters.     Continue reading →

Grant Morgan Out at Bailey’s

by Steven Doyle

Last night I attended the monthly Bailey’s Prime Plus wine dinner which featured Soter Vineyards and cheffed by Michael Ehlert from another Bailey’s enterprise, Chesterfield. You recall Ehlert, the bright CIA grad who has worked at Brasserie and DBGB in New York.  Ehlert has been planning this dinner for about a month and really shined last evening.    Continue reading →

Savor Dallas and the Importance of Proper Glassware

by Steven Doyle

In the past few weeks we discussed how a glass can make a difference with a cocktail, a beer and certainly wine.  Wines react when exposed to air, and the bouquet, body and structure of wines react differently depending on the type and shape of the wine glass used.

A larger opening means greater exposure to air, allowing the wine to breathe, enhancing the wine’s bouquet  and structure. The rim acts like a vent, releasing or trapping the wine’s bouquet within the glass.  As you sip the wine it aerates revealing more notes and bursts the flavor.    Continue reading →
