Cafe Momentum Touches Community

Chef Janice Provost

It has always been my contention that restaurateurs are some of the most generous people on the planet. Perhaps it is inherent in their personalities that drives them to make others happy and feed them. We see their acts of kindness each week at a variety of charity events that take place across Dallas and Fort Worth on any given night. For each event we bear witness to this generosity as the chefs not only donate their time, but also their product.

This is a fact that escapes most people when attending a charity event. We taste the rack of lamb samples, or perhaps a beautifully prepared hand made pasta or the abundance of pork belly. More often than not this is all considered a donation by the restaurant.

Taking this concept one step further both Janice Provost and Chad Houser of restaurant Parigi have come up with an amazing concept that will not only feed the masses, but employee them as well.    Continue reading →

The Common Table: Beer vs. Wine Dinner Battle

by David Donalson

Imagine the announcer at a big fight, introducing the match-up: “In this corner, coming in shades of red and white, representing the east coast of California, the underdog, Wine!” (Tim Campbell waiving from the corner, smiling knowing he has a great product in unfriendly waters) Then the drum roll begins, with Jeff Fryman walking in under thunderous applause as the announcer begins “And in this corner, the hometown favorite, the one, the only, Beer!”

Okay, so this did not really happen this way but when you came into the Common Table for the Beer vs. Wine dinner, you knew you were in for an all-out fight. Truth be told, both Tim and Jeff were very supportive of each other and as Corey, proprietor of the Common Table, said: “We are here to have fun.”    Continue reading →

The Modern Career Bachelor

Toni,

I’ve been dating a 43 year-old guy for ten months, but I feel like our relationship is stuck in limbo.  The entire reason why I’m dating a guy thirteen years older is because I thought he’d be more mature and more inclined to settle down.  He’s never been married before nor does he have any children.  So when we first started seeing each other, I laid my cards out on the table to be clear about what I was looking for.  He said he wanted the same, but now I’m not so sure he meant it. Thoughts?

by Crave Staff

Parigi co-owners Janice Provost and Chad Houser have announced a new nonprofit restaurant concept called Café Momentum, which will serve as a culinary training facility for disadvantaged youth. To create opportunities for these teens to work with real chefs, and to raise awareness and money for the restaurant, Provost and Houser have launched a monthly pop-up dinner series starring guest chefs from the Dallas area. The first event is June 5, 2011, at Milestone Culinary Arts Center, featuring the talents of Jeffery Hobbs, chef-partner at Suze Restaurant.   Continue reading →

Texas Bloombonnet

by Lance Lynn

Last month I introduced you to Eric and Karen from Caprino Royale down in Waco, one of the most promising young farmstead operations in the state. Last weekend, we got to visit their farm as part of our annual cheese tour (see Steven’s article for a complete roundup of the day). One of the highlights of the trip for me was getting to see where they make Caprino’s fantastic new addition to their lineup: the Texas Bloombonnet. A beautiful bloomy rind goat button, Bloombonnet is easily enjoyable all on its own, but the cheese is all the more impressive when you know some background about the difficult and inspired path that led to its creation.  Continue reading →
