Chef Matthew Wilbur Joins Up On Knox

On the heels of French restaurateur Stephan Courseau (Le Bilboquet, Up On Knox) announcing that he has partnered with Junior Borges to open a third Knox-Henderson eatery, diners may have noticed a few menu changes at Up On Knox, his American Brasserie located just steps from the Highland Park entrance to the Katy Trail.

Thanks to Borges, Courseau was able to hire Executive Chef Matthew Wilbur, a classically trained chef with 15 years experience in the industry. Wilbur has honed his skills in some of the best kitchens in the country, including Bouchon at The Venetian in Las Vegas; Alex at Wynn Las Vegas; Citronelle at Carmel Valley Ranch; The Lion in New York, and many more. With several Michelin starred kitchens under his belt and time spent working under chefs Thomas Keller, Alex Stratta and Michel Richard, Wilbur eventually made his way to Dallas where he cut his teeth at The Joule Hotel with Borges as the Executive Chef of Banquets and Catering for almost two years. More Restaurant Closings

pints.jpgby Steven Doyle

It has been a terrible week for restaurant enthusiasts and owners alike as we report a few more closings today including Pints and Quarts and Mercado Juarez Dallas.

Pints and Quarts opened exactly three years ago next week and suffered a few heartfelt struggles, namely parking which can be precarious at best on Lowest Greenville. But shed no tears for owner Brooke Humphries who recently opened another Pints in the Centrum building off Oak Lawn, and with 3,500 square feet as opposed to 900 on Greenville.  Continue reading

For fans of this location looking for delicious hand pulled noodle soup or their juicy xiaolongbao the Deep Ellum location is still moving strong.

Downtown Carrollton may have hit its saturation point of restaurants, or perhaps Babe’s Chicken is all our friends in Carrollton are looking for. Continue reading

Memorial Daze at Shoals Sound and Service

Juego_de_domino.JPGby Steven Doyle

So many choices for fun events this weekend and we have one perfectly terrific one that will leave you scratching your head as you belly laugh throughout the day. Shoals Sound and Service is this cheeky little bar run by many of Dallas’ elite bartenders and owned by Omar Yeefoon and Michael Martensen. You will find Yeefoon there most hours but Martensen is running a beach resort at the moment in Mexico. Such the life, right?

The event, if you can even call it that, is called Memorial Daze ’18 and the big draw will be the domino tourney with a $25 buy-in ($50 per team) where there will be amazing prizes and giveaways. This alone is reason enough to forgo the beach. (What beach?) Continue reading
