Living the Good Life: Chef Dean James Max – Asador at Dallas’ Renaissance Hotel

by Judy Chamberlain

I caught up with peripatetic restaurant concept guru and Nicholas Cage look-a-like, chef Dean James Max, in town this week for a few days for meetings at his splendid Asador at the Dallas Renaissance Hotel, for a late lunch and some food talk.

Decidedly un-trendy in its slightly out-of-the-way location close to the West End entertainment district and Love Field, the recently re-decorated Renaissance (try saying that three times) is a stunner – and wasn’t lost on me that my dusty vehicle was not going to require valet parking as I pulled into a convenient space mere steps from the hotel’s front entrance.    Continue reading

Sampling Wild Salsa’s Tacos Late Night

by Steven Doyle

Mentally grazing the interesting menu at Wild Salsa you notice a few interesting tamales, stacked enchiladas ala New Mexico and a hard core lamb shank barbacoa for $29. Relegated to the end of the menu, just before the requisite tres leches cake, you see a fine listing of tacos.

Although a bit pricey, what would you expect for a chef driven taco located in a beautiful building downtown. Advantage: all the taqueria located in gas stations. But this isn’t Texaco, and those aren’t your average tacos. These smack of chef Kelly Hightower’s ability to refine, as he did once before at Nova in Oak Cliff.    Continue reading

Want To Own A Food Truck? We Tell You How

by Steven Doyle

This week we spent an afternoon mulling over food trucks in the Arts District of Dallas.  The many trucks lined up to sell their tacos, sliders and baked potatoes, and with the unseasonably beautiful weather hoards of people crept from the towers of downtown to enjoy a leisurely stroll and a fond repast.

We were joined by Natalie Roffino of US Food Trucks who has played a great role in the Dallas culinary scene for some time now. She has been the junior director for the Texas Chef’s Association for the past three years.     Continue reading

Gorditas Are The New Black

by Steven Doyle

From a tiny cake of masa harina comes the perfect alternative to your daily taco: the gordita. It has been my ongoing pursuit of happiness to elevate the gordita to a fashionable status with mixed results.  The gordita can take on the same fillings as any taco with the added bonus of more flavor from the grilled masa.  Continue reading

Jack Perkins Makes Oca Tacos With Science

by Steven Doyle

It had been quite some time since we had seen Jack Perkins, the mastermind behind the Maple & Motor Burger, and with the opening of his new Oca Taco it seemed like a perfect chance to catch up him. At first it seemed odd that Perkins would open up a taco stand in a hospital administration building. The new business is located in the food court of the Paul Bass Administration Building which houses thousands of UT Southwestern workers.

Perkins was approached to fill a void in the building’s food court, and after running the numbers it made perfect sense.  Continue reading

Whachu Tacobot Willis? Taqueria Pinocho

by Danielle Leahy        photos by Jacque Manaugh

Taqueria Pinocho is a true hole-in-the-wall style taco shop. Located in East Dallas off Carroll and Main Street we were surprised to see a large dining area with more than adequate seating available for families or large groups. With all their meats on display through the glass case and waiting to be chosen and cut, Taqueria Pinocho can handle large crowds of people and large numbers of tacos in a relatively short amount of time.

With a huge selection, consisting of all the regular street taco choices and a few more unusual ones to boot, the biggest obstacle to over come was the all Spanish menu. Luckily we found everyone behind the counter at Pinocho to be more than willing to help us and very excited to share their food.     Continue reading

Rusty Taco Has Breakfast All Day

by Steven Doyle

Rusty Fenton dropped me a line to let us know he was now serving breakfast tacos all day at his restaurant, Rusty Taco.  I can’t tell you what great news this is for me personally.  Many times I have been on the hunt for a hangover cure and scouedr the city for an early afternoon breakfast taco. I issue a stamp of approval and hope for this to become a trend.

For trivia buffs out there, fenton also mentioned that he sold 562,000 tacos last year. Not bad tacomeister.

Chicken and Waffle Taco at La Grange

by Steven Doyle

One of the big things we are starting to see on menus are the unconventional sandwiches and tacos. The trend holds true with the taco-makers at La Grange in Deep Ellum.   Continue reading
