A little bit of culinary history was made last night as Aaron Franklin of Austin’s legendary Franklin Barbecue and Knife Dallas Chef John Tesar kicked off Knife and The Highland Dallas’ week-long chef series of EAT (RED) DRINK (RED) SAVE LIVES benefit dinners with an epic meat celebration.

The dinner, which sold out in less than 24 hours, highlighted Franklin’s barbecue, cooked on a special tandem smoker (nicknamed “Laburne and Shirley”) that the BBQ king transported to Dallas from Austin and used for the first time. Guests were served six courses beginning with passed hors d’oeuvres of tuna tartare cones and BBQ tidbits, then continuing with a charcuterie plate highlighting Franklin’s confit brisket ends and pork rillettes; beef cheek ravioli Bolognese with lime basil pesto; family-style 44 Farms prime New York strip with au poivre sauce and Johnny’s mac & cheese; and finally, monumental plates of Franklin BBQ brisket, beef ribs and links. Knife’s award-winning pastry chef David Collier capped the meal perfectly with a modern banana pudding and petit fours.  Continue reading

KT Burger Open In Highland Park Village, Five Creeks Opening Soon

DSC07794by Steven Doyle

Dallas has another burger offering, this time it is in Highland Park Village with the recent opening of KT Burger, which is adjacent to the theater. We made a pit stop to check out the burger and the new digs on a Monday evening and found a packed house bustling with burger eaters, families, and generally a happy crowd (we asked).

The burger is wonderfully basic, made with an 80/20 grind, lettuce, tomato, onions, pickles and mustard, which is the way every great Texan would dress their burger. Of course you may have it prepped your way. We added a side of the house-made venison chili for an extra bite and found this to be a great choice.  In addition to a pretty damned good burger KT offers a selection of sandwiches, hearty salads, brats and dogs, and a few tacos. Do not miss either the sturdy hand cut fries or onion rings. Both are a great choice.  Continue reading

Fort Worth’s Pour House Rebranding Into The Trinity River Tap House

pour house

As the community of Fort Worth gathers on May 30 for the Trinity River Craft Beer and Music Festival, all should be sure to raise a glass and make a toast to the retirement of The Pour House name. After 20 years in business, on Saturday, May 30, the Fort Worth staple is excited to announce that it will officially become The Trinity River Tap House.

The hope and purpose is that the new name will reflect the recent remodel and changes the bar has undergone in the past few years, making it the most comprehensive tap wall in town with 75 craft drafts and more than 100 craft bottles and cans. With live music, great food and several local breweries onsite, the public grand opening will be a celebration of what is to come and will include a toast by city councilwoman Ann Zadeh and US Congressman Marc Veasey.   Continue reading
