Chef Chad Bowden Can Now Be Found at Abacus

A chef who has ben mentioned on craveDFW about as much as any, Chad Bowden announced today that he will be sous chef at Abacus. All the more reason to check out Abacus.

We last saw him as Exec Chef at Stirr where he opened that fabulous kitchen with rave reviews (and certainly from us), but you may know Bowden from his long service as Exec Chef at Culpepper’s in Rockwall. There the chef made his presence known by serving pretty damn good steaks including his Caveman-style hunk of beef that he cooked directly on the coals.   Continue reading

Chef’s Choice Wine Dinner at Culpepper’s Invoked Spring

Few are as passionate as chef Chad Bowden at Culpepper’s in Rockwall. Sure, it is a little bit of a drive for those of us deep in Dallas, but the actually short and easy drive is well worthwhile. The steakhouse itself is an amalgam of add-ons to the building, and is interesting, and with plenty of character, much like the chef himself.   Chef Bowden started culinary training in Colorado working at Four star rated country clubs and restaurants. He then relocated to Texas where he became Sous Chef at the The Grape before moving on to be exec sous at 2900 Restaurant where they were nominated for a James Beard Award, one of the nations top culinary honors. He also won the 2006 Rising Star Chefs award. In 2007 he became the Executive Chef of Culpepper Steakhouse.

It is here where we pick up on one of the many wine dinners the chef hosts at his restaurant. Often Bowden will bring in friends who own wineries that he meets during his travels to California. Some top names in the industry have made the trek to Rockwall to spend time with the chef and his guests.    Continue reading

Chefs Grieb And Bowden Collaborate On Antinori Wine Dinner

One of our favorite chefs is not in Dallas, but in Rockwall. Actually, there are a mass of great chefs working the streets of the sleepy burb across the lake just 20 minutes away from Dallas. Two of those chefs will be collaborating on a special win Italian wine dinner featuring Antinori wines.

Culpepper Steakhouse chef Chad Bowden and chef-owner of The Fatted Calf, Ted Grieb will partner up to serve dishes that include fresh fish, braised lamb, handmade pastas and house-made cheese Thursday, September 13, 2012 7pm at Culpepper’s in Rockwall. The wine dinners at Culpepper’s are always at capacity and sold out to a very happy crowd. We have attended many of these and always had a fantastic evening.              Continue reading

Mauritson Dinner at Culpepper Steak House

Clay Mauritson is a sixth generation grape grower. Notice we didn’t say winemaker, because it wasn’t until 1998 that the family produced its first bottle of Dry Creek Zinfandel under the Mauritson label. Prior to this date the family devoted their 270 acres to growing grapes that would be made into wine by other winemakers.

Today the family produces some amazing wine that is super affordable and we had a chance to sample the juice last night at a special wine dinner at Culpepper Steak House in Rockwall, which has this amazing affinity for bringing fantastic winemakers into their restaurant with uncanny abilities of chef Chad Bowden who has developed these special relationships with these vineyards.       Continue reading
