In Chili We Trust: The History of the Enchilada and the Five Dallas Versions That Earn the Name

The word enchilada is the past participle of the Spanish verb enchilar — to season with chili, literally “the chili’d thing.” The dish is older than the country it became famous in, older than most of the languages spoken around it, older by centuries than the state of Texas. The Mayans were among the first to dip corn tortillas in chili sauce and eat them as a complete meal.

When Spanish conquistadors walked into Tenochtitlán in 1519, they found the Aztec court already eating elaborate versions of the same idea — tortilla as vehicle, chile as the point. Bernal Díaz del Castillo wrote about it. The Spanish adopted it, modified it, and carried it through three centuries of colonization. By the time Mexico declared independence from Spain in 1821, the enchilada had already been evolving longer than most nations had existed.

Brunch Notes: Mesero

It is time we make the rounds for brunch once again and there are so many options in Dallas which seems to be the brunch capital of our nation. We certainly take those long, leisurely hours sipping mimosas and bloody marys very serious in our city. For the life of Mico Rodriguez he has done nothing more than try to please us all. Early on in his career you know he was responsible for bringing us what is now the behemoth M Crowds restaurant group which own Mi Cocina et al. A bout with alcoholism took this company away from him and left his to his own devices and went about to correcting this portion of his storied life. Mesero Opening At Inwood And Lovers

A new restaurant we just caught wind of, but know few details, is from Mico Rodriguez. Mico plans to open Mesero in the Inwood shopping center located at Inwood and Lovers in Dallas. The restaurant is not another Mr. Mesero or even an incarnation of Mesero Miguel, but instead will stand on its own with several more in the works. Mico tells us that the new spot will embrace American spirit and Mexican life.   Continue reading
