It’s not often you meet a chef like Tom Fleming – he’s edgy, funny, brutally honest, and knows good food starts from the heart. Originally from Chicago, he worked under Jean Joho at Everest and later won a James Beard Award for “Best New Restaurant” at Brasserie Jo for Joho.
The youngest of 7, Fleming found his love for food right from the beginning. His strong set of skills from a classical French training background began at a young age with his mother, who was a French trained cook and later spent time in France where he staged at Paul Bocuse and L’Auberge de I’ille. Komali Serves Traditional Comida Corrida
Recently we had a chance to try out an exciting luncheon option at Komali that is priced well and served fast, Comida Corrida. This is the traditional table d’hote, a small meal of several courses at a fixed price eaten between about 1 and 4 p.m in Mexico. In the case of Komali, this is a three course prix fixe mid-day meal.
For $14 you get whatever combination they may have served up that day with no substitutions. This enables the lunch diner to get in and out quickly while still having a satisfying and authentic meal. Continue reading

Wachu Tacobot Willis? Macho Nacho
Tacos are not known for being the healthiest item in the World. This is a common Tacobot lament when viewing another menu full of meat, cheese, and not much else. Thank the Salsa Gods for places like Macho Nacho on Cedar Springs bringing a refreshing and healthier twist to our traditional Tex-Mex favorites. Specializing in locally -sourced produce the menu at Macho Nacho is sure to satisfy a taco-lovers taste without sacrificing all those hard-earned hours in the gym.
Located in the old Hunky’s Hamburgers spot at the corner of Cedar Springs and Throckmorton the small but comfortable space is decked out in crisp white, dark chocolates, and bright orange. Plush enough to be mistake for an upscale coffee lounge or boutique bar, the ample patio more than doubles the seating of the inside. Continue reading

Chefs Announced For Annual Caesar Competition
Last evening the AIWF made their big announcement for the year, the entries for this years 20th Annual Caesar Salad Competition. On a typical year if a chef had won the competition, they would not be eligible to win again, but this being the big 2-0 year the rules have changed. For the 2011 competition, the competitors have not been hand picked as in previous years, instead past winning chefs are making a return visit to ferrest out the Master Caesar. Continue reading

The Quest for the Ultimate Burger: Stratos
Last week’s burger rave took our intrepid group to Nick Rizo’s restaurant Stratos which specializes in Greek food. Greek specialties include gyros, soulvaki, moussaka and spanakopita. When we entered the restaurant, we were greeted by a friendly hostess and seated at a marble topped table near the main bar. Our server took our drink orders and I ordered Max’s Greek Burger cooked medium rare which featured sauteed red onions and feta cheese and cost $9.99 on the menu. Continue reading
