Kuczwaj On Path For Success At Bailey’s

by Steven Doyle

We have been following the changes at Bailey’s Prime Plus for many months now.  The interesting local restaurant that up until just weeks ago had locations in Dallas, Cedar Hill, Fairview and Fort Worth. I say recently because the Fort Worth has closed with the explanation that although it was actually successful, there was an offer for the space that was far too good to pass up.

With the advent of hiring Ken Kuczwaj as overseer and general manager for the Bailey’s family of restaurants, there have actually been some very positive changes. Let’s look at those and see some current results.   Continue reading →

Momentum Reaches Important Landmark

by Steven Doyle    photos by Robert Bostick

It has been a full year for Café Momentum. This week we shared with the joys of the young organization as it lifted up its accomplishments with the same beaming happiness that any proud mother or father might. This past Sunday there were big announcements, bigger surprises and shared joy for each who attended the full-circle dinner with Café Momentum’s first guest chef, Jeffrey Hobbs at his new restaurant, Sissy’s Southern Kitchen and Bar.

Some of the surprises included a fat check from Whole Foods after they earmarked a percentage of a single day’s profit from their Lakewood store. The check would total $4413.00, but was raised to an even $5000 by an exuberant guest. Café Momentum has many of generous guests like this couple as they get ever closer to their goal in raising enough funds to open a brick and mortar restaurant to support these boys in their hour of need.            Continue reading →

Summer Fresh Desserts At Fearing’s

by Steven Doyle

A full year ago we spoke with Fearing’s Jill Bates. Jill is the spunky pastry chef that is continually coming up with unique and artistic desserts that keeps her sweet-toothed guests satisfied. We stopped in Fearing’s at the Dallas Ritz Carlton recently to find out what she had planned for the summer’s menu.

One ingredient Bates is finding especially wonderful this time of year are the new crop of peaches she is picking from Cooper Farms in Parker County. Tim Cooper’s farm grows some of the state’s best peaches and the 2012 crop is particularly excellent since we had just the right weather and rain.      Continue reading →

A Visit To Spiceman’s Urban Oasis

by Steven Doyle

Each day you will find Tom “Spiceman” Spicer trudging through his 11,000 square foot garden or making deliveries to his wholesale restaurant clientele. Spicer maintains an urban garden in the same complex as Jimmy’s Food Store and next to Urbano Café at Bryan and Fitzhugh in Dallas.

On his tiny plot of land Spicer grows cash crops that are highly desirable to the restaurant and bar trade, but he does a bit of retail business out of his store front where he usually offers a unique selection of mushrooms, sometimes foraged by the Spiceman himself, and a selection of greens.    Continue reading →
