Sea Breeze Open For Biz After Remodel

by Steven Doyle

One numerous occasions we have chimed the praises of the unique fish market in Plano, Sea Breeze. This is one location in the Dallas area we can score a really nice lobster roll and take home a few pounds of shrimp or fresh fish.

Today fishmonger Rick Oruch sends word that he is alive and well after a nifty remodel, and that he is also offering whole belly clams. He will make them several ways, in a roll or as a full-on fried clam plate with all the accoutrements.   Continue reading

Feast of the Seven Fishes at Urban Crust

by Steven Doyle

Urban Crust will be serving an amazing three course dinner this Christmas Eve. The Feast of the Seven Fishes originates from the Medieval Roman Catholic Italians who refrained from eating red meat during the sacred holidays and instead enjoyed a feast of seven types of fish on Christmas Eve. Urban Crust will compose a dinner of several types of fish including mussels, calamari, octopus, shrimp, scallops, crab meat, sea bass, tuna, salmon and flounder.    Continue reading

Happy Gumbo Day!

by Steven Doyle

Happy Gumbo Day! Let’s celebrate the day by enjoying a cup, and we found a bargain for you all at Fish City Grill where we reported last week that chef Randy Morgan is now stationed. Morgan tell us that he is offering a cup of gumbo all day for a buck.

Gumbo is that crazy good thickened soup made widely popular in the 80’s with the sweeping Cajun movement led by New Orleans chef Paul Prudhomme (remember the chef on PBS that looks strikingly like actor Dom DeLuise).

Often confusing, there are actually several versions of the recipe, specifically Cajun and Creole. Most tastes in the North Texas area lend itself to the Cajun variety which is made up of a very rich and dark roux made with seafood and sausages.

Chef Morgan shares a recipe for gumbo for those not wishing to suffer a short drive. Catch the recipe on the jump.      Continue reading

Chef Randy Morgan Pumps Up Menu at Fish City Grill

by Steven Doyle

We just heard that chef Randy Morgan, the former Microsoft executive chef who has also had stints locally at Oceanaire (as corporate chef trainer), Dallas Fish Market and Hibiscus, has defected and moved on to Fish City Grill to inject new life into the restaurant.

Says Chef Morgan, “When you taste really honest cooking, it is like an awakening unlike anything else. I prefer to deal with small companies who are passionate about the product they send me. I receive several phone calls every morning at the restaurant from the small boutique purveyors I have worked very closely with for the past six years. I look forward to their call because I know that they have gotten their hands on something really amazing and they want me to try it out. And when they share those special catches with me, I feel like a kid at Christmas time.”    Continue reading

A Fishmonger’s View of San Diego

by Jon Alexis

Well East Coast seafood is fresh
I really dig the lobsters they prepare.
And that Southern Gulf fish like Pompano and Grouper
knocks me out when I’m down there.

The Pacific Northwest Wild Salmon is healthy
and delicious when grilled up right
and the big Great Lakes are full of Walleye and Whitefish
that keeps those northerners full all night.

I been all around this great big world
and I’ve eaten all kinds of fish
I couldn’t wait to back to some of the United States’
freshest seafood in the world

I wish they all could have Southern California
I wish they all could have Southern California
I wish they all could have Southern California’s seafood

It’s funny, when we think of the nation’s coasts, the ones with the worst weather tend to be the seafood stars. There is no surfing to distract us from Boston’s lobsters. Pike’s Place Market is cool, but would it be a tourism hub if Seattle had sunbathing beaches? If in LA, San Francisco’s Fisherman’s Wharf would be the location of multimillion dollar movie star mansions.   Continue reading
