Roasting and Baking were the topics du jour during class four at the 3015 Trinity Groves cooking school. I was looking forward to this one because we were going to roast a chicken and make penne al forno (ostentatious mac n’ cheese) and really, what more does an American need?
As usual, we started with a team huddle and group hug (not really) to talk about our action plan for the night. Dr. Mike, class instructor, talked a bit about how to use the convection oven. This was great, because I’m scared to death to use mine. He said when using the convection, simply assume the oven temperature is 20 degrees hotter than your recipe states and then shorten the cooking time by a third. So if the recipe says 350 degrees for 30 minutes, just assume it’s at 370 degrees and cook it for about 20 minutes. No sweat, I got this. Continue reading →
Ali Kay Hammer is back on our radar again, this time the Scardello cheese monger is getting her biscuit on at Hypnotic Donuts on Garland Road in East Dallas. If you recall, just a week ago Ali was rocking the Peticolas house during their first anniversary with her wedding to the beer Velvet Hammer.
Beginning tomorrow and at least through the end of the month of January, you can experience what it is like in Ali’s mouth by ordering her version of the chicken biscuit. This is an ongoing program at Hypnotic and there have been more than a few fun versions of the chef driven biscuit since owner James St. Peter decided to invite chefs to play in his wacky kitchen once a month. As much as we would like to give notice of the many backyard boils across the city, you may not appreciate a few thousand craveDFW readers poking through your fence to join the party.
The owners of Bar Method, the muscle sculpting studio that blends science and dance techniques for a better Parkie tush are now opening a juice bar next to their Inwood Village salon called Juice Bar. Lisa and Tom Henning’s will open the juicery early April and plan on hydrating their students between sessions with blends of a variety of fruits.
We are sure there will be plenty of coconut water and kombucha tea on hand.
We will probably be hearing more of these crop up, but there is an Anti-Valentine’s Day Party hosted by Frankie’s Sports Bar & Grill on Tuesday, Feb. 14, 2012. This is where you celebrate your singleness with a bar full of other happy singles.
