J Chastain New Chef de Cuisine at Mansion

We just received a word from J Chastain at Second Floor  restaurant located in the Westin Galleria that he has tendered his resignation and accepted a position at under Bruno Davaillon at the Mansion as the new Chef de Cuisine. This will be Chastain’s second round in the kitchen at the Mansion, last time he was Sous Chef under Dean Fearing.

After leaving the Mansion Chastain was executive chef for Stephan Pyles  where he said he said he expanded his talents to more “Spanish and Mediterranean style cooking”.         Continue reading

Newbold Named Chef at Rathbun’s Blue Plate Kitchen

Today Rathbun’s Blue Plate Kitchen introduced Chef Jennifer Newbold, who will work directly under Executive Chef and Partner, Kent Rathbun. Newbold’s diverse culinary background and proven leadership skills make her the perfect fit for the popular Dallas restaurant. In her role, Chef Newbold will oversee day-to-day kitchen operations and work to craft light, fresh and flavorful dishes.

Prior to joining Blue Plate Kitchen, Newbold worked at another Kent Rathbun restaurant – Jasper’s in Plano, TX. Before that, Newbold was the Chef de Cuisine at Blue Point Coastal Cuisine in San Diego, and other stints include Sous Chef and Pastry Chef positions at restaurants in St. Louis, MO.

From seafood-focused restaurants to vegetarian fine dining, Newbold’s varied experience helped to hone her creativity and expansive culinary repertoire, now on full display at Blue Plate Kitchen.    Continue reading

Dallas Santa Rampage is a flash mob that meets a Santa-themed mobile party. The group of fledgling Santa’s have met for the past 10 years and the sleigh full of Santa’s has swelled to a belly busting 400+. Now is your chance to be part of this phenomenon on December 17, 2011.

The meeting place for the Santa’s is always a secret, just as the various destinations for the evening. Clues have been released on Facebook, but the details are a bit foggy. Circus Freaks Each Monday in Richardson

Mondays often bring with it a bit of despair as we anticipate the coming of paperwork, traffic woes and the end to the weekend debauchery. But it doesn’t really need to be this way. At least for a troupe of at least 50 revelers that gather in Richardson each week at The House of Poets located next to Peace Pipe Hookah Lounge.

Maple & Motor Meets Il Cane Rosso

Jack Perkins beats to a different drummer. This is a fact that he well embraces, and quite possibly the key to his success at Maple & Motor Burger. Perkins has met with his share of controversy, mostly surrounding his role as task master at the burger Mecca. Having rules in place keeps Jack’s house in order, especially during fast paced lunches when lines etch outside and around the building as local burger devotees anticipate their favorite nooner.

It is because of his character and place in the restaurant landscape that Perkins was recently invited into the fold of chefs that are participating in Cane Rosso’s Industry Night. We reported on this some weeks ago as owner Jay Jerrier announced that he would host a large variety of chefs each week, and premiered the string of evenings with The Grape’s chef Brian Luscher.    Continue reading

We Celebrated National French Toast Day

We celebrated National French Toast Day today by having a bite of the dish at the Original Pancake House, along with a few other favorites. The latest OPH opened recently in Addison, so we thought we would check out the new digs for one of our favorite breakfast spots.

In Spain they call this dish torriga, in the UK they refer to this as Poor Knights of Windsor, and in France they call French Toast pain perdu, or lost bread. Thought to come from more humble roots in a time where food waste was non-existent, old slices of bread were rejuvenated in an egg wash and fried to a crisp enjoyment, much like we would serve this today.   Continue reading
