Mr. Flynn was the long-time Wine and Beverage Director for the Rosewood Mansion on Turtle Creek hotel and restaurant. He is the North Texas Sales Manager at Dionysus Imports. He is widely regarded as one of the top wine professionals in Texas. He is a true professional and a gentleman to boot.

Veritas Wine Room favorite chef Jon Stevens recently returned from a multi-week tour of Spain, and plans on cooking up some of the good stuff he discovered on his voyage. Stevens spent some time in Barcelona, and ate his way through the city. He then went to Granada before moving on to Sevilla. He told Bradley Anderson, co-owner of Veritas that the tapas in Sevilla were simply stunning. Continue reading

If you are a regular reader of craveDFW you know that we are super fans of TJ’s Seafood Market located on Preston at Forest Lane, and the new location on Oak Lawn Across from Al Biernat’s restaurant. The reason is simple, the proprietor Jon Alexis flies his seafood in every day, all day. He buys in quantities that sell quickly so nothing remains each day. We liked our beef aged, but not our snapper.
Alexis has teamed up with the boys at Veritas Wine Room (located on Henderson in Dallas) the third Sunday of each month to provide a lobster bake that includes a whole lobster, potatoes, corn, clams, mussels, sausage, etc. for $30. That shindig starts at 5:30 on the third Sunday of each month. There are plenty f great beers or wines t pair this dinner up with, so don’t miss that. No surprise that TJ’s Seafood Market does some incredible things with, well, seafood. Jon Alexis makes it his personal lot in life to ensure that you are eating your fair share of fish and other sea critters.
Alexis has been flying in some terrific species of fish as of late, and soon will have Nantucket Bay Scallops and Stone Crab (both delayed because of Sandy). However, both locations are always jammed packed with unique offerings, and we told you about the new location that offers plated food like that kick ass lobster roll we keep squawking about. We interviewed the latest chef at The Greek last week with anticipation of running the story today, but we have more recent news that Taylor Kearney is leaving the restaurant and has been installed as executive chef at Nick and Sam’s Steakhouse located on Maple Avenue in Dallas. Kearney will be working under the corporate chef, Samir Dhurandhar.
The musical toques that have taken place recently might be due to the many new restaurants that have opened this month; a flurry that will continue on into November of 2012. The pool of qualified talent is in shorter supply as the demand rises. The Greek will be seeking a new chef to fill Kearney’s shoes. Continue reading
