Take a Cocktail Class at The Usual

by Steven Doyle

Ever wanted to study under a master barman? Want to start a promising career in mixology or just want to impress at the next dinner party? Now is your chance to work with one of our areas best, Brad Hensarling.

You may know Brad from one of his bars in Fort Worth like The Usual on Magnolia, or just down the street his more divier haunt, The Chat Room. Brad recently worked with chef Matt McCallister in setting up the spirits program at Campo, and was seen behind the bar at pop-up bar 828 many times.   Continue reading

Meet Nick and Sam’s Somm Brian Knoy

by Steven Doyle     photos by Robert Bostick

On a visit to Nick and Sam’s Steakhouse this past holiday we had the pleasure to meet with manager and sommelier Brian Knoy. Brian is a young buck in the industry, but his passion for service and wines is obvious and shines through in his conversations. Originally from Yuma, Arizona, Knoy happened into the industry as he sought out interesting people as his Marine Corps family hopped around the country.

Knoy is subtle and super likable. He has an effortless charm about him that makes service simple and unpretentious. Let’s visit with Knoy at Nick and Sam’s Steakhouse in Dallas.                 Continue reading

2012 Dive Bar Tour Rolls Through Dallas

by Steven Doyle     photos by Robert Bostick

Planning the latest Dallas Bus Tour was a blast. Previous editions included tours that explored Tacos, Pizza, Burgers, and even vegan food in Dallas. The trick behind a successful tour I am finding is not to over think the process. Load up 25 adults onto a bus full of beer, wine and cocktails and point them in any direction and they will have fun.

Such is the case for the latest tour which explored dive bars of Dallas. Now here might be the rub for some, what exactly is a dive bar? I have my definition, you have yours. However, for the first tour exploring almost only alcohol I wanted to play it safe. No stabbings, no arrests, no crying.            Continue reading

Bar and Book Opens at Lonestar

by Katie Minchew

Bar & Book. I’m going to get right down to business. Bar & Book has some good food! And they have some… inventive food–I will give them that much for sure. The most inventive item on the list was our first to test: Fat Elvis Fries. Oh yes, Elvis fries. Wondering what they are? Sweet potato fries covered in peanut butter sauce, chopped peppered bacon, and dried banana chips. It was not my favorite dish of the night, but I was so intrigued that I kept on munching, trying to sift out the different flavors that I couldn’t quite believe they combined in one dish. Elvis must have had a more adventurous pallet than mine.

After doing a lap around the awesome new 3 million dollar building, my dinner companion and I found a comfy little table looking down on the spacious bar, eager to accept the dozens of dishes being passed by the smiling waitresses.   Continue reading

Anastacia Quiñones Now at Komali

by Steven Doyle

This weekend former chef at Alma, Anastacia Quiñones, sent word to craveDFW that she had taken a position at Komali owned by Abraham Salum.

We spotted chef Quiñones yesterday and she has already started working at the very popular Mex-Mex restaurant located on Fitzhugh and Cole on the cusp of Uptown Dallas, and she said she was excited to work with Salum and eager to be working. After a few months of family and recreation, we can imagine she is excited to be back in the kitchen and eagerly await to see how she impacts the menu.

We also noticed a shorter and stylish  coiffure for the chef.
