Dallas Farmers Market Chef Series

It is time once again for the Dallas Farmer’s Market Winter Chef Series. These marvelous cooking classes are no doubt the best deal in Dallas. Meet the chefs and learn fun cooking skills. The line up this Winter is really special. Each class is scheduled from 11am to 1pm and costs $25 which is due the Thursday before the session. Holiday Vignettes: Nanci Taylor

Nanci Taylor, Publisher of Edible Dallas & Fort Worth magazine is starting her third season of production. Nanci’s passion is to promote local food and its sources and artisans, throughout the North Texas area. You may find free copies of the quarterly on stands Whole Foods and North Haven Gardens, as well as many other locations around DFW.You may also read each issue online.

As I have traveled around the city speaking to owners and chefs of Dallas restaurants, many often refer to Nanci as one who carries the torch for the local food movement we have been experiencing over the past few years. Old Fashioned “Barn” Raising

The weather couldn’t have been ordered up more perfectly than it was delivered for the “Barn” Raising event at Eden’s Organic Garden Center & CSA Farm in Balch Springs yesterday. Everyone, it seems, loves fresh, natural, “yard-eggs”. Marie was selling her eggs through her CSA and on-farm market, when the supply was sufficient. Availability can be a real problem, however, when predators moved in to her urban farm where her chickens enjoy total and absolute “free-range”. “The recent drought has moved predators in much closer than ever before in the 10 years there have been chickens here.” Says, Marie Tedei, owner of Eden’s.   Continue reading

Shop, Wine and Dine This Weekend

We have a few shout outs for the weekend and think you might enjoy a few of these.  There are a few things going on that you might enjoy.

First let us mention that we saw Miguel Vicéns and John Paul Valverde owners of Campo Modern Country Bistro  last night and they wanted to let everyone know they do indeed have a liquor license. There were just a few days in the beginning that they did not have one, but now you can enjoy the cocktail program designed by Brad Hensarling of Fort Worth’s The Usual at the new Oak Cliff restaurant.  

Saturday you can start your Christmas shopping by purchasing wares from local artisans at the Dallas Flea, the occasional market located in the Southside of Lamar at 1409 S. Lamar. Here you will find amazing clothing, jewelry, food and vintage wear all under one room and made by some super cool locals.   Continue reading

J Chastain New Chef de Cuisine at Mansion

We just received a word from J Chastain at Second Floor  restaurant located in the Westin Galleria that he has tendered his resignation and accepted a position at under Bruno Davaillon at the Mansion as the new Chef de Cuisine. This will be Chastain’s second round in the kitchen at the Mansion, last time he was Sous Chef under Dean Fearing.

After leaving the Mansion Chastain was executive chef for Stephan Pyles  where he said he said he expanded his talents to more “Spanish and Mediterranean style cooking”.         Continue reading

Dallas Farmers Market Friends Hoedown Lowdown

As I walked into the Food and Fiber Pavilion at Fair Park, my wife looks at me and says “I remember this from last year. Hope this year is just as good.” Last year highlights were Randall Copeland’s AVA and now Left Bank, Matt McCallister (with editor Steven Doyle acting as a sous chef) who was then with Stephen Pyles, and Balcones True Blue corn whiskey from Waco. This year had a lot to live up to.

How can you pass up Mr. Lemley’s tomatoes and other produce? All I know is this guy can grow groceries! We need a moment to savor this food porn.

Welcome Yolanda Banks

We wish to welcome Yolanda Banks to craveDFW as a new contributer. Yolanda is a mother and culinary instructor who lives in Dallas, Texas. Yolanda has appeared on the Food Network, Good Morning Texas, At Home Live, and various affiliates around the country sharing her passion for food.

In 2006, along with welcoming a baby boy, Yolanda’s first cookbook Cooking For Your Man was published. In 2007, Yolanda launched her business and website, Fresh Is Fabulous. Salum at Beard House Friday

You will not find Abraham Salum anywhere in Dallas this week, but you can spot the chef-owner of namesake Salum and Komali in New York City as he begins preparation for his James Beard House  dinner he will serve Friday evening.

It is considered one of a chef’s highest honors to pull duty at the residence of James Beard in the culinary world. Julia Child once summed Beard up as “ the quintessential American cook. Well-educated and well-traveled during his eighty-two years, he was familiar with many cuisines but he remained fundamentally American. He was a big man, over six feet tall, with a big belly, and huge hands. An endearing and always lively teacher, he loved people, loved his work, loved gossip, loved to eat, loved a good time.”    Continue reading
