Exclusive: Thai Chef Eddy T. To Open Bite In Fort Worth *Updated

Recently we learned that PakPao opening Chef Eddy Thretipthuangsin left the restaurant with fuzzy details. We since found out that Thretipthuangsin will soon be opening his very own restaurant in Fort Worth. No name or date just yet, but we were told to sit tight for more information to follow. It is truly a good day for those that love Thai cuisine.

Malai Thai-Vietnamese Kitchen Hosts Special Dinner Featuring Chef Paul Singhapong

One food event I look forward to each year is a special dinner hosted by Malai Kitchen owners Braden and Yasmin Wages. The talented couple run what Yasmin calls an upscale mom and pop restaurant located in the West Village. For the past three years they have been open they have called upon their mentor Thai chef Paul Singhapong into their kitchen to create a special one of a kind Thai dinner. Do not feel left out that you did not attend this dinner because we gave you plenty of notice to buy seats before they sold out.

Now retired, Singhapong has worked in top kitchens throughout Dallas and San Francisco and serves as consulting chef for Malai. The chef’s name is synonymous for amazing Thai cuisine, and for a handful of guests we were enlightened a bit further into this special style of cookery. For this dinner Singhapong tapped into all the resources available, including a special fishmonger out of Louisiana, and even in the chef’s own garden where he grows his own herbs for just such special occasions.     Continue reading

ZENse Thai For Bright Colors And Flavor

This past weekend on craveRADIO we hosted Chef Tiffany Derry who raved about a restaurant that at one time she lived very close to. ZENse Thai is located on MacArthur Blvd, and in a shopping center where there are mostly Indian restaurants and shops, which makes this Thai restaurant a stand out. It just happens that the food is incredible. Derry is so taken with the restaurant that she often stages at ZENse to “sharpen her wok skills”.

Derry was kind enough to extend an invitation for lunch yesterday and we happily agreed. Along for lunch was co-host Uno Immaninvong who has an affinity for Thai having grown up with these flavors. We were also able to use Chef Uno to listen in to the kitchen talk which was not nearly as amusing as I had hoped. It was all work for the ladies who run ZENse.   Continue reading

Thai Me Up Dinner At Malai Kitchen With Retired Chef Singhapong

On Thursday, September 12, Malai Kitchen will host the third in a series of “Thai Me Up” dinners featuring guest chef Paul Singhapong. Now retired, Singhapong has worked in top kitchens throughout Dallas and San Francisco and serves as consulting chef for Malai. He and host chef Braden Wages will team up to serve a family-style, five-course menu exploring Thai coastal cuisine highlighting traditional seafood dishes. We have been fortunate enough to attend this each year and find this the most exquisite Thai dining event available in Dallas.  You will not wish to miss this one.

An Evening With Chef Paul Singhapong at Malai Kitchen

Now retired, chef Paul Singhapong has had a fantastic career working in fine kitchens in both Dallas and San Francisco. The chef worked at the Brasserie Savoy Restaurant in San Francisco, Beau Nash at Dallas Crescent Court Hotel, The Mansion on Turtle Creek and the Melrose Hotel. In 1990 he became the poissonier chef for the Adolphus Hotel’s French Room and in 1985 Singhapong joined the staff of the Lowe’s Anatole Hotel in Dallas. He was also executive chef at the Bay Leaf which garnered 4-stars from the Dallas Morning News. More recently Singhapong  was the executive chef of Cru.               Continue reading
